The British nearly killed their cheese industry off after WWII when they kept their war time regs on the books.
They finally killed them off in the 1990s and some of the almost extinct local cheeses are being reborn.

Sounds interesting.
I am somewhat partial to German Tilsit. It smells utterly horrific (think high school locker room 7 weeks into the semester and nobody has taken their strip home for washing), but is really quite delicious!
I toasted some at 0130 in the morning at work one night, and the lunchroom was still unusable by the other staff at lunch the next day.
It doesn’t just stink, it STAINKS!
