Every year we go to my husband's aunts house. Lately, I am lazy and we unexpectedly have a new dog. So, we are staying home and hopefully we can make a picnic in the backyard. It has been a long time since I started a foodie thread, so what are your plans/recipes for Easter dinner?

Fresh Ham or Smoked Ham?

Well even though I broke my upper left femur in 4 places about 3 weeks ago I think I can throw a Cook’s ham in the oven. Then we always have scalloped potatoes, asparagus, jello salad, cole slaw, deviled eggs, stuffed celery, green and black olives, pickles, dinner rolls and an apple pie.
Add fruit salad to that list and you have our menu.
I will be making a bee line for my daughter in laws...she and my son are both great cooks and one of their son’s graduated from culinary arts program....:O)

It's the easiest recipe, the ham is sweet - but not TOO sweet & the cola seems to tenderize it too.
I just bake a ham as you normally would, but I put it in a lidded roasting pan (trim any excess fat & score the outside of the ham) & pour in up to a can of cola (depending on the size of the ham and the pan).
It's really good! Some people put pineapple, brown sugar and the usual ingredients in with it too - but I like the simplicity of just the cola (I use Coca-cola) & I can't eat all of that sugar anyway (have to save that for dessert!).

Now that’s a nice new tradition. Everyone invite a Muslim over for an Easter sunrise service and a fine Easter dinner.
How about baking peeps on top of all these yams/sweet potatoes that everyone is talking about?

We always have a leg of lamb. Squeeze lemon juice liberally, salt and oregano. 350 degrees for about 20 minutes per lb. Next, make rice with fresh spinach and season with the lemony drippings from the lamb. Great Greek Easter dinner.

Ham, Potato Salad, Cornbread Dressing, Blackeyed Peas and Garlic Bread along with Sweet Tea to wash it down. Coconut Pie and Peach Cobbler for dessert. And I just may make some Homemade Ice Cream or almost as good buy some Blue Bell Homemade Vanilla!
You leg of lamb people have just about got me convinced.
If anyone is interested, here is my marinade for Greek Leg of Lamb:
First I buy American leg of lamb, about 5 lbs. (boneless or with bone)
Approx. 24 hours before cooking, I make a marinade which consists of:
1 cup extra virgin olive oil
1/2 cup worcestershire sauce
juice of 1 large lemon or 2 small lemons
salt, pepper, oregano
5 garlic cloves
Put marinade items in food processor until well blended and garlic is finely chopped.
Set aside.
With knife, make several slits in lamb.
Pour marinade over entire lamb and then rub it on all over.
Cover and refrigerate until ready to cook.
I cook mine in a cooking bag in a 325 oven for about 1 1/2 to 2 hours. It depends on if you like your lamb a little pink or well done. You can check this after it has cooked for 1 1/2 hours. If you feel it needs to be cooked a little more, check at 15 minute intervals.
When done, let it sit covered for about 15 minutes before slicing.

Our family will have a Costco ham, with the glaze packet, except I use whiskey where the recipe calls for water. We will also probably have artichokes, fresh fruit of some sort, potatoes or bread, and a carrot cake that is reasonably good, but not world-class.
I used to make leg of lamb, with basil and garlic stuffed into little cuts all over the meat. It was phenomenal to me, but my family liked ham better, so ham it is.
No Peeps in the basket. But Starburst jelly beans and some malted milk balls are required.

So sorry to hear that. We are in the same boat. These GenXers can be very judgemental. My husband says they just need to live their own lives and then judge us. Bless you and your wife and Happy Easter.
