The Greek tradition is to have lamb on Easter as the day celebrates the resurrection of Christ, "The Lamb of God".

We always have a leg of lamb. Squeeze lemon juice liberally, salt and oregano. 350 degrees for about 20 minutes per lb. Next, make rice with fresh spinach and season with the lemony drippings from the lamb. Great Greek Easter dinner.
