I like cheese! Do you like cheese?

Inspired by a conversation with my best friend I wish to talk about cheese. Yummy, yummy cheese (for those of us not lactose intolerant)! What are your favorite cheeses? What is your favorite recipe with cheese. This thread is all cheese, all the time.

Kraft canned Cheddar Easy Cheese on Hi HO crackers, washed down with cherry sugar-free Kool Aid. Pure heaven.

Of all the ugly cheeses ever to inhabit a planet, Feta has to be at the top of the list. If I’m close enough to smell it, I’m TOO close!

Asiago, Gouda, Emmenthaler swiss, Stilton, gorgonzola, sharp white cheddar, gruyere, hard parmesan, cottage. . .

Our favorite new cheese recipe is this:

1 large loaf of French bread, crusts removed, cut into large cubes
1 stick butter, softened, cubed
1 8-oz package cream cheese, softened, cubed
8 oz shredded sharp cheddar (yellow or white)
8 oz crumbled blue cheese (I prefer Stilton)

Preheat oven to 375 degrees. In a medium saucepan, over medium heat, melt butter, then add cream cheese, melt and stir until smooth. Remove from heat and stir in cheddar and blue cheeses until well mixed and mostly melted. Dip each bread cube in cheese mixture until thoroughly but lightly coated. Bake until uniformly light brown (turning cubes occasionally to get all sides browned). I’d say around 7-8 minutes per side, but my oven has been unreliable lately, so go by your own. Serve warm or can be gently reheated in microwave.

The first batch I made of these was consumed in just minutes, and I’ve made three batches since then.

New Year's Eve or day would usually find my dad with limburger cheese and herring on Ritz crackers. I love the taste of limburger, but refrain from having any, since it takes a week and a bottle of Scope to get the smell to go away.

My latest cheese is made out of hazelnut coffee creamer. I poured it in my gym shoes to get the smell right and I’m just letting it ripen in the garage. It should be ready by Valentine’s Day.
