Heh, I figure I can at least add my sheets to make up a nice dark load.

When one automatically doubles any recipe, leftovers are a given... though actually if I keep living a fairly-Atkins lifestyle, that might not be too big a problem, I'll just learn to cook three meals on Sunday afternoon, freeze them, and eat them all week. Then I hopefully won't succumb to temptations later and eat, say, pizza.

I finally broke down and mopped my kitchen at about 2:00am! SSQ and the kids had tracked in dirt from working in the hole yesterday, and I never got around to it earlier in the evening. Feels so good to walk on it in bare feet!

Started SB last Tuesday and when I weighed this morning, I'd lost 7 pounds! Of course folks with more weight to lose, lose faster at first, I understand. But this isn't too hard to do, so I'm gonna stick with it. I'm staying in Phase 1 for three weeks rather than the suggested 2, cause we have a family reunion coming up in August. I'll go into Phase 2 while I'm there, so the additional stuff I can eat may make me less prone to cheat. But regardless, I can always go back to Phase 1 for a couple of weeks when we get back, if I need to do that.

I'm fixing to have my second cup of coffee. I've gotten used to Splenda in my coffee, so that helps. I made myself an omelet with 2 eggs and shredded veggies (broccoli,cauliflower,cabbage, carrots), then sprinkled it with a little cheese. Yummy!

7 pounds - congratulations! It works well, doesn't it? ;-) I'm losing pretty slowly now, but I'm also within 10-15 pounds of where I'll be stopping, so I know it's gonna be a little tougher to lose from here on out. Just wish I was more patient...

Of course, the fact that I cheated a lot over the holidays and while Ben and his gal were here didn't help. But I didn't gain any either, so there's that!

I love having omelets for breakfast! I haven't really changed my breakfasts much from Phase 1, except that I occasionally have pancakes or cereal (Kashi Go Lean) with yogurt and berries.

I usually use the Cabot light cheddar. It's cheap up here, and vey tasty.

I'm going to try making quiche for breakfast. I always feel like it's a waste of time to cook in the morning, even though I know I should eat...

Yeah, that was my thinking. I could make a quiche that has all the stuff I like in an omelet, and just eat a slice for breakfast for a couple days, and it would serve as an emergency dinner too...

Can you tell I'm quite thrilled about cooking for myself? That's second only to the joy of not sharing a bathroom!

These are delicious, though the texture may feel funny at first; kinda spongy. I got this in an e-mail from South Beach. For the leftovers, you can take them from the fridge and pop them in the micro for less than 30 seconds on half power, and they're ready to eat.

Sausage and Cheese Breakfast Cups
Phase 1
Makes 6 cups
Description
These egg "muffins" make a hearty breakfast that can be eaten on the run. Make them ahead and warm them in the microwave for a fast and slimming breakfast treat.
Ingredients
4 ounces turkey sausage or crumbled turkey bacon
1/2 green bell pepper, chopped
1/4 onion, chopped
5 large eggs
1 can (12 ounces) sliced mushrooms, drained
1/2 cup (2 ounces) shredded reduced-fat Cheddar cheese
Instructions
Preheat the oven to 350°F. Coat a 6-cup nonstick muffin pan with cooking spray or line with paper baking cups. In a medium nonstick skillet over medium-high heat, cook the sausage, pepper, and onion for 5 minutes, or until the sausage is no longer pink. Spoon the mixture into a bowl and cool slightly. Stir in the eggs and mushrooms. Evenly divide the mixture among the prepared muffin cups.
Sprinkle with the cheese. Bake for 20 minutes, or until the egg is set.
Nutritional Information:
140 calories
9 total fat (3 g sat)
195 mg cholesterol
4 g carbohydrate
12 g protein
1 g fiber
400 mg sodium

Does sound good...though I think if I did it I'd probably use fresh mushrooms and just cook them with the sausage for a bit. Are they a pretty good size? I tried the ones from the South Beach cookbook, but they came out pretty tiny...I think maybe I didn't put enough veggies? In any case, it took two or three to satisfy me.

Having a big salad with balsamic vinegar and olive oil for lunch. Yum!

HI Fedora! Thanks for 'listening'...it was a teeny little kerfluffle I was fuming about...no real argument at all. We both have a tendency to mouth off, and after 14 years, something we have learned to deal with and let blow over. I was just fuming publicly. We got it straightened out.

Am gonna work more on the script today and this week.

She wanted me to pass on to everyone that she has NOT forgotten about us. She and her husband have decided to build a home, and have been living in an apartment temporarily until the house is finished, expected in August, and as such has not had cable or the internet installed, as their residence in the apartment is only temporary. She says would like to say hi to everyone in the Hobbit Hole!!!!

Hey WN...I had some of your Habanero-Peach preserves this morning. It frightened me at first...but it wasn't killer hot like I thought -- but it was downright tasty! You must have been "judicious" with the Habanero!
