This, and future threads, will attempt to answer some of your questions and requests regarding HEALTHY food in general, and LOW CARB, LOW CALORIE diets and recipes in particular. With my background as a Master Chef, and Natural Foods Sexonutritionist, aka SexyChef (/dreamer) Bwhahaahahahahah, it affords me a wonderful vantage point to assist in creating this forum, where everyone can contribute, exchange ideas and voice their valuable opinions. Moderating in no way qualifies me as an authority on this, or any other subject.*..heheheh ..that has never inhibited me before.. blush

Pawing throught the fridge one night this is what came together for dinner. By avoiding tomato based sauces it's lower carb. I'm sure by adding in a little onion or dill or cayenne etc it could be improved upon with a modest addition of carbs.
If others do make improvements I'd love to hear their results.
Low Carb Curried Shrimp
8 oz shrimp
2 TB butter
1 TB lemon juice
2 tsp curry powder
1/3 cup mayonnaise
1 melt butter in skillet, add curry powder. Saute shrimp until done adding dash lemon juice at end
2 remove shrimp
3 pour leftover curry/butter/lemon drippings into mayonaise for dipping. (may add a little more curry powder if desired)

And over the 4th of July I REALLY wanted a margarita. This is what I came up with. Its pretty non-traditional but it satisfied my craving. Lots of nutra sweet in the crystal lite...so if you're nutrasweet sensitive beware.
Anyway here's a starting point to experiment from.
No Carb - Low Carb Margarita
Margaritas basically are sweetened orange, lime (lemon) and tequila. I couldn't find any sugar free orange syrup. So I used sugar free Tang for orange flavor with 0 carbs. Thus it acquires an orange color rather than the traditional green. Tastewise, it's an acceptable (though not perfect) substitute. It's a fair bit sweeter than my ideal preference for a margarita. But, the salt around the rim helps cut the sweetness, as does the unsweetened lime juice. As nearly as I can tell, it has 0 carbs if you don't use the lime juice.
ice cubes
1/2 tub Crystal Lite lemonade
1 tsp Sugar - Free Tang
3 oz tequila
splash lemon-lime seltzer if needed for blending and consistency
1 TB lime juice concentrate (this is where the carbs are...may omit if desired)
1 Measure out ice cubes in glass to be used ( about 1 1/2 cups cubes will slush down to a full glass)
2 Rim glass with salt if desired (I think it cuts the sweetness of the drink)
3 Place ice in blender, add Tequila, shake in powdered Crystal lite and Tang.
4 Blend to desired consistency. If the tequila doesn't provide quite enough liquid to blend effectively...a splash of lemon-lime seltzer will help.
Servings: 1
Yield: very large slushy (16 oz) drink

Cooking Tips
If the orange color is annoying, using a few drops of orange extract and not using the tang may 'cure the problem'.

Curry? How wonderful.... Yummmmmmm Backatcha.. ;)I don't think I have to tell you that as a Chef, devising recipes that are prepared with canned anything or, heaven-forbid a microwave, is akin to fingernails on a blackboard. That said, there are those of us that don't always have the time, or the inclination to labor over a stove every day.
Sooooo, I will be assisting those dear souls that work outside the home, by posting a few unique, really easy, or adaptable to FAST and TASTY meals...
Microwave Lamb Curry
- 1/2 cup chopped onion
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped celery
- 1 apple, sliced
- 2 teaspoons curry powder
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/3 cup soy flour ( or all-purpose flour )
- 1 cup chicken broth
- 1 cup milk
- 2 1/2 cups lamb, cubed
1) In a microwave-safe baking dish lay out in single layer cubed lamb. Microwave on HIGH for 5 minutes. Remove, drain and toss, continue to microwave for another 5 minutes, or until done. Remove and drain. Set aside.
2) In another microwave-safe baking dish combine chopped onion, chopped green bell pepper, chopped celery, and cored, sliced apple. Microwave on HIGH, covered, for 4 minutes.
3) Stir in curry, salt, cayenne pepper, and flour. Gradually stir in chicken broth and milk. Microwave on HIGH for 6 minutes, stirring once, or until the mixture thickens.
4) Stir in cooked, diced lamb and microwave on HIGH for 3 minutes.
Makes 4 servings.
Serve over the cooked rice. (or with steamed cauliflower*, drizzled with a touch of balsamic vinegar)
* I'll belabor the virtues of cauliflower on a separate post.. LOL

Just a little interruption here, if I can...just got this email from a friend. Makes sense to me !!! Har!
Well we just about cover everything.
With the average cost for a Nursing Home per day reaching $188.00, there is a better way
when we get old & feeble. I have ascertained that I can get a nice room
at the Holiday Inn for around $65.00; that leaves $123.00 a day for beer, food (room service), laundry, gratuities and special TV movies.
They have a swimming pool, a workout room, a lounge, washer, dryer, etc.
Most have free toothpaste and razors, and all have free shampoo and soap. Super 8 is somewhat more economical and they have a free breakfast, though you usually have to walk next door for lunch and dinner.
There may be a bit of a wait to get that first floor room, but that's OK, it takes months to get into decent nursing homes. There is the senior bus, the handicap bus (if you fake a decent limp), a church bus or van, cabs, and even a regular bus.
For a change of lunch take the airport bus and eat at one of the fast food cafe's there. The Inn has security, and if someone sees you drop over, they will call an ambulance.
And should you break a hip, the American way is to sue! What more can you ask for? As a bonus, they all have AARP and other Senior discounts. So, when I reach the Golden Age, help me keep my grin. Just check my old rickety butt into the nearest Holiday Inn!

A Lower (than average) Carb, Ranch Dressing
- 1/2 cup mayonnaise *
- 1/2 cup sour cream **
- 1/2 cup buttermilk***
- 1 tablespoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried dill weed
- 1 tablespoon dried chives
- 1 tablespoon dried parsley
- 2 tablespoons grated Parmesan cheese
- 1 dash hot pepper sauce *****
- 1 tablespoon Worcestershire sauce
- 1 teaspoon ground white pepper ****
Combine the mayonnaise, sour cream, buttermilk, garlic powder, oregano, dill weed, chives, parsley, Parmesan cheese, hot sauce, Worcestershire sauce, pepper and refrigerate for at least 1/2 an hour. If the dressing is too thick, add a little extra buttermilk to thin. * see post #193, for the much better homemade version.
** Sour Cream Substitute: Try draining yogurt overnight to make a low-fat, high-calcium alternative to cream cheese, sour cream or whipping cream. Yogurt cheese made from plain lowfat yogurt is mildly tart. Substitute it for sour cream in stroganoff, or use it in place of whipping cream in quiche
*** Buttermilk Substitute: (adjust the amounts for each required use) For 1 cup, use 1 cup plain yogurt or sour cream; 1 tablespoon lemon juice or vinegar plus enough milk to make 1 cup; 1 cup milk plus 1 3/4 tablespoons cream of tartar; or 1/4 cup buttermilk powder and 1 cup water.
**** White Pepper Substitute: Yeah, I know, you don't have white pepper, go ahead use black.
***** Go to the damn store... Bwhahahahahahhahhahhahahaha

FAST AS A FLASH LOW CARB BBQ SAUCEThis is not going to win any prizes, but it works just as well as most store bought, and a whole lot cheaper.
- 1 cup tomato sauce ( you could use Catsup)
- 3 Tbls worcestershire sauce
- 1 Tbls cider vinegar (cider or distilled I prefer cider, because I had to look up how to spell "distilled")
- 1 tsp liquid smoke
- 3 pkts Splenda (any of the sweeteners would be OK I guess, I used this and it worked fine)
Combine all ingredients and cook over low heat for 10 min.
I snatched this recipe off a Liquid Smoke box, after I discovered I didn't I forgot to make my own FABULOUS recipe (not LOW CARB), and my kids were about to eat my toy Doxy. .:)
Makes 16 Tbls (1 cup) at 1.2 carbs ea.

It's so old, I probably bought it sometime early in the last decade, before I was married. I found it when we were moving, and packing the kitchen stuff. I packed it, and it's now in my new house. Gee, ya think I should just toss it?

Gee, ya think I should just toss it? Actually not, but I would mix it with that old cornmeal, and/or any other outdated spice you have, perhaps even that stale box of baking soda in the back of the fridge, and use it in the flower bed, anthill, or across your threshold of your garage door!
I have no idea if it will kill them, but it will confound the critters, probably pi$$ 'em off, and get you to buy some new stuff! Bwhhahahahahah

The graham crackers are kind of a faux crust, as they sink as it cooks. 22g. of carbs ain't bad for a slice of pie - just budget your carbs for the meal to allow for the carbs in the pie, and quit complainin' and enjoy it :)

the hope of having something to eat for breakfast on Atkins besides eggs finally convinced me to register. Hope you all can help!
Ok - 2nd try at a reply here. This newbie will get the hang of this eventually... If you are in Atkins induction this won't work for you but for anyone else it will. I like to make a quesadilla once in a while for breakfast. I found some great tortillas on the net - made by laTortilla Factory. They have 9 grams of carbs. But with the newest Atkins method of counting carbs they are only 3 net carbs each - the 9 minus 6 grams of fiber. So an entire quesadilla is only 6 carbs. They come in green onion, whole wheat and herb/garlic and some other flavors too, I think. They are a heavy tortilla but then I like bread that when you drop it on your foot it hurts. You can also use them to make tortilla chips, just cut them in wedges and fry them in olive oil or I guess you could deep fry them as well. Great with guacamole. There are lots of things you can eat for breakfast besides eggs. Previous nights left overs work for me sometimes... but then I have never been a picky eater ;)
