Mushroom sales soar as Americans cook more at home during pandemic

As produce sales at grocery stores surge during the coronavirus pandemic, one item is selling particularly well -- mushrooms.

During the last week of March, fresh mushroom sales were up 18 percent over the same time last year, compared to an 8 percent rise in overall fresh produce sales, according to the Chicago-based data and analytics firm IRI.

If people are buying mushrooms, then they must also be about ready to eat berries and grapes again.

So far, I have only bought fresh fruit and fresh vegetables that I can give a quick wash with soap and water.

Cubed ham, 4 eggs, green pepper, onion. mushrooms and Swiss cheese make for a great omelet. I make them often.

I have been buying fresh blueberries for the last 6 weeks.

I leave them on my back porch for a couple of days, and then wipe off the container before putting them in the fridge.

I ordered take out pizza from a local place by Fort Jackson last night.

When I picked up, waiting in line for 3 to a room and picked up, one of the hard-working pizza place people had to tell every call in order they were out of mushrooms.

When I picked up, there were maybe 8 people outside. After being inside for about 10 minutes, the line was all around the perimeter of the parking lot.

Small lot. I guess 20 people.

Mushrooms are fairly high in zinc. Not the best source of zinc, but probably in the top twenty food sources.

I will buy berries before I buy grapes...

because grapes are manhandled. Some just pick out the amount of grapes that they want.

I sometimes wonder how early humans were able to identify poison mushrooms.

I'm thinking some had to learn the hard way.

Yes, I have mostly been sticking to fruits and veggies that are prepackaged.

On the items that are individually selected, I usually buy things that I will cook.

I miss my takeout salads that I used to buy several times a week, but I would not touch a tossed salad made by someone else right now.

Super-easy boneless pork chops in creamy
mushroom gravy. comforting and delicious.

Smothered Pork Chops in Mushroom Gravy

ING Pork Chops 4 boneless pork chops 2 Tb veg oil 1/4 cup flour 1 1/2 tsp garlic powder, s/p Mushroom Gravy ing Tb veg oil small onion, finely chopped 8 oz white mushrooms, thinly sliced, tsp garlic, minced 2 Tb flour, cup chicken stox, 1/3 cup milk, s/p.

METHOD Heat skillet over high heat. Dredge chops in combined flour, s/p, garlic powder. Set aside. Add 2 Tb veg oil to hot skillet. Swirl to coat.Add pork chops,cook 3-4 min per side to brown. Remove to server; keep warm.

Mushroom Gravy Add Tb veg oil to pork chop pan. Reduce heat to medium high. Add onions/mushrooms. Cook/soften 5-6 min; starting to brown. Add garlic; cook a min. Mix in flour; stir til no longer white. Whisk in chix stock, milk. Bring to simmer. S/p.

FINAL Add pork chops back to pan. Simmer 5-7 min til gravy thickens and pork chops are cooked through.

SERVE immediately, showered w/ chp parsley.
