Israel is the only country in the Western world, where birth rates are above the replacement level of 2 children per woman. Of all Western nations, Israel shows the greatest resistance to cultural suicide.
If Europeans do not increase their birth rates, the future of Europe will be Muslim. Judaism is one of the founding cultures of Western civilization, alongside the Ancient Greek and the Ancient Roman cultures. Jews have lived in Europe since 300 BC. The Ancient Greek and Roman cultures died out, but Judaism still survives. Judaism is the longest-lasting culture of Western civilization, having been around for 3,500 years.
Imagine what would happen to countries like Sweden and Germany, if the majority converted to Judaism. They would reverse their tendency towards cultural suicide. A Jewish Europe is not only better than a Muslim Europe, but Europe would maintain its leadership in the sciences.

1. For one thing, what exactly is "Judaism" as a culture? I think of it as a religion, and since it is an anachronistic religion (from a Christian perspective) then why would anyone in Europe who is interested in preserving a Christian culture go out and convert to Judaism?
2. As others have pointed out, you are making a gross assumption that Christian nations have an inevitable death wish that results in their decline. I'd also point out that many Europeans are perfectly OK with their culture (however they define that) dying -- as long as they don't have any discomfort and difficulty while it happens. If anything, I'd suggest that Israel is almost identical to Europe in its secular, leftist mindset.
3. What is the ultimate end of science, in today's world?
Whatever happens to "western civilization," by acknowledging the truth of Judaism not only the "west," but the entire world, would be rescued and brought to G-d. Conversion to Judaism is not necessary and is in fact discouraged. All that is required of non-Jews is that they accept and abide by the Seven Noachide Laws, which I have been attempting to witness to on this forum for going on eighteen years now.
Anyone interested should contact an authentic Orthodox Jewish rabbi to learn about these Laws and make the transition. While at one time this would have been impossible for most of humanity the Internet leaves most people today without excuse.
Europe has always been enamored of Muslims? You might want to do some basic research on Europe’s history with Muslim invaders over the centuries.
It may have been better if they had not help kill the Jews off in the first place, European culture ended in 1941 when France joined in with the extermination.
While I know you did not mean this as a compliment, nevertheless you make a very good point which is too often obscured. Too many people, including those engaged in Jewish outreach, try to identify traditional Jewish education with secular education. This is a fallacy. The high rate of secular intellectualism in the Jewish population doesn't come from traditional Jewish education but from "enlightenment" secularism, just as the long-time radicalism of the Ivy League doesn't come from the "Old Deluder Law" or the Protestant Reformation's commitment to Biblical literacy but from the same source. The "enlightenment" is the source of almost all our woes in the world today (though it certainly had roots going back much further).
However, it is nonetheless true that the Torah contains the entire universe encoded at one level or another. For example, the ancient Jews knew the exact length of a lunar month without access to the observatories and astronomical fixation of surrounding cultures because this information had been given by G-d to Moses and his successors.
I'll take the Torah over secularism of any variety any day.

Israel has two cultures in one country - the traditional culture and the modern culture, and Jews move frequently between these two cultures. The modern culture creates the wealth and the science, and the traditional culture produces the babies. Many people reared in ultra-orthodox communities often join the modern culture, and contribute to wealth creation and science.
The state benefits paid to the ultra-orthodox are not a waste of money, because many of the children of the ultra-orthodox end up joining the modern Israeli sector. The future of the Israeli pension system depends very heavily on the children of the ultra-orthodox who join the modern sector.
It is the ultra-orthodox who have helped to raise the birth rate among Jewish women from 2.6 children per woman to 3.13 per woman, and made it equal to the Arab birth rate. The ultra-orthodox are the root of the Jewish people, and they prevent modernity from inflicting cultural suicide on the Jewish people.
It would be great if white Christians would support the Amish people, in the same manner in which modern Israelis support the ultra-orthodox. Pension systems in the Western world would never go broke.

As I said, anyone who converts to any religion for some lowly pragmatic, utilitarian purpose (such as to "preserve a culture") is doing it for the wrong reason. Obviously if one's purpose is to preserve a chrstian culture, converting to Judaism (or Noachism) would be self-defeating.
However--if one is looking for the Truth then investigating the claims of Judaism makes perfect sense, and why no one ever seems to think of this absolutely eludes me.
Fortunately, being from the Bible Belt, the only (lehavdil!) "chrstendom" I ever knew was Saul, David, and Solomon. Us Bible-thumpers are notoriously unappreciative of the thoroughly alien (to us) medieval European civilization--thank G-d!

The long journey out of Catholic Anti-Semitism had begun and an ever sympathetic affection for Torah and Jewry followed. An accommodation for both must be made. Then, at last, the incidental historical scaffolding of man made religion will begin to fall away, and the glory of the Olam Haba (Millenial Kingdom) will be realized.
Israel’s high birth rate is due to religious Jews practicing patriarchy. Christian can return to high birthrate in the same manner if we return to biblical norms on families just as the religious Jews have.

But Islam is not part of Western Civilization. But Judaism is among the founding cultures of Western civilization. That is the major difference.
Jews have lived in Greece since 300 BC When a state is majority Jewish, it is recognizably European. European culture is honored in a majority Jewish nation, than in European Muslim nations like Albania and Bosnia.
If you took Equatorial Guinea, where the average IQ is 59, and converted them to Judaism I don't think you would see a sudden outbreak of new vaccines and computer designs. It might still be good for the society to have a unifying religion, but it's not going to make them into really smart Jewish people.

Actually, many peoples in the ancient Near East knew the lunar calendar - long before Moses ever walked the earth. Moses grew up using a calendar in Egypt which fully understood the phases of the moon. Besides that, haven’t you ever thought that Psalm 81:3-6 indicated knowledge of a lunar calendar among Hebrews BEFORE Moses’ birth? You could still say it was given by God to the Hebrews in a sense, but God certainly didn’t wait until Moses to do it if Joseph was using it.
According to the ancient Rabbis, Jesus is boiling in a vat of boiling feces, and his mother is a whore. That tends to support the opposite of what you are saying, if the early Rabbis hated the Messiah so much.
Christ was the founder of Christianity, just as Christians have been reporting since the day He was resurrected.
