Get series about HEALTHY, and LOW CARB FOOD

This, and future threads, will attempt to answer some of your questions and requests regarding HEALTHY food in general, and LOW CARB, LOW CALORIE diets and recipes in particular.

With my background as a Master Chef, and Natural Foods Sexonutritionist, aka SexyChef  (/dreamer) Bwhahaahahahahah, it affords me a wonderful vantage point to assist in creating this forum, where everyone can contribute, exchange ideas and voice their valuable opinions. Moderating in no way qualifies me as an authority on this, or any other subject.*..heheheh ..that has never inhibited me before.. blush
* (a cheap unofficial GENERAL ESCAPE CLAUSE.. HA!)
 
There are many other FReepers, (you know who you are.. LOL) on this amazing site that have a great deal more detailed knowledge and information on specific topics, that will no doubt emerge. Sooooooo, lets get started..

New Fashioned Liver with Onions

Raise you hands, how many out there are shocked to see liver on the menu... OK .. 55.. now, how many are going to make it...  :{

1) Sauté the onion in 1 oz. butter and 2 tbs. oil in a covered skillet over a low heat.
2) As the onions are cooking and the liquid is reduced, add some finely minced parsley. Set aside where they can remain hot.
3) Season the liver slices with salt and pepper.
4) Sauté the slices of liver on each side very quickly in 1 oz. butter and 2 tbs. oil over a high flame, turning with a wooden spatula to avoid pricking it with a fork.
Sprinkle with the wine turn and sauté for about 1 minute and remove from heat.
Serve with the caramelized onions and a sprinkle of parsley.. Yummmmmmmmmm

Crazy Cajun Crock-Pot Jambalaya

If you are busy screwing around on FR and want a great dinner you can lie and say you slaved over all day..this is it! :)

1. Cut chicken into1 inch pieces.
2. Put all ingredients (EXCEPT shrimp and rice) in crockpot.
3. Cover; cook on low for 6+ hours.
4. Add shrimp the last 20 minutes of cooking.
5. Stir in rice before serving.
Stand back and wipe your brow and put on that pained smile, you know the one, and take your bows..you little devil... :)

Would like to be on your ping list.

I have ben low carbing it since May but have really plateaued in the weight loss department. My problem is that I am nursing a six-month-old Freeperet and am ALWAYS STARVING! Also, we keep kosher so that complicates it a little (no dairy and meat at the same meal). I also HATE Splenda and other fake sugars, can only tolerate them in the Atkins protein bars if I have to.

I came up with two EASY EASY recipes. Try these:

One is for "ice cream," and you have to have lost your sweet tooth a little to eat it, but it is SO GOOD. In your food processor, mix about equal parts cream and frozen berries (raspberries or blackberries, no sugar added of course). It has great consistency and mouth feel of ice cream without the cloying sweetness. If you don't get the desired consistency, add one or the other ingredient til you do.

Add some unsalted chopped nuts and pretend they are chocolate chips. Yum.

NACHOS! I love nachos. I discovered the ONE VEGETABLE that stays crunchy in the microwave: JICAMA. Jicama is a big beige root in your local produce department. It's allowed in unlimited quantities on Atkins. Peel it (by chopping off the peel side with a knife is how I do it), and slice the white interior fairly thin, into "chip-sized" pieces. Spread over a decent paper plate. Top with lots of shredded cheddar and chopped pickled jalapenos. Microwave until cheese melts. It's really good!

Carlo, what could I substitute for the shrimp in your jambalaya? Could you imagine a normal fish in there, like even a monkfish? Or would you just leave it out entirely if you can't eat shrimp? Thanks. It looks so good; trying to make it kosher too. Loooove my crock pot.

Any firm fish or I have used crab claws in shell.. that was really great and gave the kids something to make a mess with.. LOLOL

I only had one problem on Atkins that I kind of worried about. I started with OWL due to breastfeeding, and ate a small amount of fruit and macadamia nuts a day. After about 3 months, I started noticing bruises all over my arms and legs. Every tiny bump was turning into a bruise. We were in Hawaii at the beach, so it was unsightly, and also a little discomfiting.

I thought it might be a Vitamin K deficiency. I don't like to take actual supplements, so I added almonds to my diet instead of the macadamias. They are cheaper, too. Anyway, ever since I added the almonds, I have not had a single bruise.

By the way, my baby is very healthy. In his books, Atkins CYA's by saying that nursing (and preg of course) women should not go on weight loss diets but could do his lifetime maintenance. However, there is a quote of his online somewhere where he tells women it is OK to go on OWL if you are nursing. Obviously this is not a time to do anything like Induction, but adding a little fruit and nuts gives quite a complete diet, without all the bad stuff.
