ARCTIC EXERCISE

WADI CROSSING

I was up until 4 am making blueberry and pinapple jam the other night.

Next morning the blueberry was firm but the pinapple sloshy.

It firmed up by the time I got off last night.

Pinapple Jam.

Double batch.

2 cans of Dole crushed pinapple in juice
need enough water to bring the total volume to 6 cups.

2 boxes of powdered sure gel.
6 cups of sugar.

Stir in the powered sure gel..bring to a rolling boil that you can’t stir down.

Add all the sugar stirring constantly until it comes back to a rolling boil.

1 TBS of butter will help keep the foaming down.

Boil stiring for 1 minute.

Remove from the heat and jar it.

Water bath process for 10 minutes.

It made 13 1/2 pints for me.

Just enough for my sisters and special friends.

Took the pot scrapings and made just 1 jar of blueberry/pinapple..Should have made more.

What kind of pectin did you use. I don’t think pineapple has any pectin, at least not for me. Share the recipe?

Used to be easier in the days of cloth diapers.

I thought about the combo before I made the jams.

I didn’t want to try something “innovative” when they were intended as gifts.

All food experiments get taste tested on Tazman first.
