I was up until 4 am making blueberry and pinapple jam the other night.

Next morning the blueberry was firm but the pinapple sloshy.

It firmed up by the time I got off last night.

Pinapple Jam.

Double batch.

2 cans of Dole crushed pinapple in juice
need enough water to bring the total volume to 6 cups.

2 boxes of powdered sure gel.
6 cups of sugar.

Stir in the powered sure gel..bring to a rolling boil that you can’t stir down.

Add all the sugar stirring constantly until it comes back to a rolling boil.

1 TBS of butter will help keep the foaming down.

Boil stiring for 1 minute.

Remove from the heat and jar it.

Water bath process for 10 minutes.

It made 13 1/2 pints for me.

Just enough for my sisters and special friends.

Took the pot scrapings and made just 1 jar of blueberry/pinapple..Should have made more.

Thank you for sharing Tasmanianred. I’m going to try it. In fact, I’m going to mix a small batch of the blueberry and pineapple.

Got it...e-mailed it to myself for printing off & thanks Taz.

About to finish off a pumpkin roll for a friend of mine & I’m feeling beat.

Been cooking since 10:00 and my kitchen (me) could use a rest.
