Not being familiar with trains....does the snow mean the trains aren't running? You will have to drive? Be safe whatever mode of transportation you must use.

COOKING WITH THE CANTEEN

Irish Soda Bread

Whether or not you're Irish, this classic quick bread recipe brings great taste into your kitchen.

Prep Time:10 min
Start to Finish:55 min
Makes:1 loaf (14 slices)

3 tablespoons butter or margarine, softened
2 1/2 cups Gold Medal® all-purpose flour
2 tablespoons sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup raisins, if desired
3/4 cup buttermilk

1. Heat oven to 375ºF. Grease cookie sheet.
2. Cut butter into flour, sugar, baking soda, baking powder and salt in large bowl, using pastry blender or crisscrossing 2 knives, until mixture resembles fine crumbs. Stir in raisins and just enough buttermilk so dough leaves side of bowl.
3. Turn dough onto lightly floured surface. Knead 1 to 2 minutes or until smooth. Shape into round loaf, about 6 1/2 inches in diameter. Place on cookie sheet. Cut an X shape about 1/2 inch deep through loaf with floured knife.
4. Bake 35 to 45 minutes or until golden brown. Brush with butter or margarine, softened, if desired.

I'm making my annual favorite

IRISH BEEF STEW WITH GUINNESS STOUT

Hearty beef stew for the Irish and the Irish at heart

Ingredients
4 tablespoons olive oil or butter

6 bay leaves tied together with string

4 lbs beef stew meat,

2 large yellow onions, peeled and cut into 1/4

4 garlic cloves, peeled and chopped

2 teaspoons dried thyme

2 tablespoons parsley, chopped

2 teaspoons dried rosemary

4 Tablespoons dark Roux (see recipe below)

2 8 oz cans beef broth ( option: a third can may be added later as it cooks)
2 6 oz cans tomato paste ( option: a third can may be added later as it cooks)
1 bottle Guinness stout ( option: a second bottle may be added later as it cooks)
3 tablespoons brown sugar

1 Lb baby carrots

2 LB new potatoes

Option Note: 1 six-pack of Guinness is sufficient. I used almost 2 bottles in the stew, the rest for drinking. Buy a 3rd can of tomato paste and beef broth incase you wish to increase liquid later in cooking. I added the extra cans and also more brown sugar and it turned out great.

Directions:
1. Melt the butter in an oven proof stockpot and brown meat on all sides. Sear the meat well on high heat, seasoning with salt and pepper, and maybe some cayenne as it cooks. Remove the meet from the pot and set aside.
2. Add to the stockpot the onions and cook a few minutes until they are clear.
3. Reduce the heat to low and deglaze the pot with one bottle of Guinness scrapping the sides of the pot well. Add the garlic, thyme, rosemary and roux and stir until smooth.
4. Add the beef broth, bay leaves, tomato paste ,and brown sugar; simmer, stirring until the stew thickens a bit. Add the meet back, and the potatoes and carrots. *At this time add more beef broth, tomato paste, Guinness, or roux as needed, getting the thickness and flavor just the way you like it. Check for salt and pepper. Cover pot.
5. Place the pot in the oven at 300 F: for 2-3 hours, stirring a couple of times.
8-12 servings Cooking time 2hr 30 minutes

Dark Roux: Ingredients needed:
• ½ cup oil • 1 cup flour
In a saucepan, heat oil over medium heat until just smoking. Whisk in flour, a little at a time and cook, whisking constantly, until roux becomes smooth and thick. Continue until roux becomes a rich brown nutty color, about 25 minutes. Yield: about 1:1/2 cup

Irish Cream Bars

Need a little dessert to complete a fine dinner? Try a sophisticated bar that will pair nicely with coffee.

Prep Time:25 min
Start to Finish:2 hr 55 min
Makes:24 bars

3/4 cup Gold Medal® all-purpose flour
1/2 cup butter or margarine, softened
1/4 cup powdered sugar
2 tablespoons unsweetened baking cocoa
3/4 cup sour cream
1/2 cup granulated sugar
1/3 cup Irish cream liqueur
1 tablespoon Gold Medal® all-purpose flour
1 teaspoon vanilla
1 egg
1/2 cup whipping (heavy) cream
Chocolate sprinkles, if desired

1. Heat oven to 350ºF. In medium bowl, mix 3/4 cup flour, the butter, powdered sugar and cocoa with spoon until soft dough forms. Press in ungreased square pan, 8x8x2 or 9x9x2 inches. Bake 10 minutes.
2. In medium bowl, beat remaining ingredients except whipping cream and chocolate sprinkles with wire whisk until blended. Pour over baked layer. Bake 15 to 20 minutes or until filling is set. Cool slightly; refrigerate at least 2 hours before cutting. For bars, cut into 6 rows by 4 rows.
3. In chilled small bowl, beat whipping cream with electric mixer on high speed until stiff peaks form. Spoon whipped cream into pastry bag fitted with medium writing or star tip. Pipe dollop of cream onto each bar. Top with chocolate sprinkles. Store covered in refrigerator up to 48 hours.

1 Serving: Calories 105 (Calories from Fat 65); Total Fat 7g (Saturated Fat 4g, Trans Fat ncg); Cholesterol 30mg; Sodium 30mg; Total Carbohydrate 10g (Dietary Fiber 0g, Sugars ncg); Protein 1g Percent Daily Value*: Vitamin A 6%; Vitamin C 0%; Calcium 0%; Iron 2% Exchanges: 1 Fruit; 0 Other Carbohydrate; 0 Vegetable; 1 Fat Carbohydrate Choices: nc *Percent Daily Values are based on a 2,000 calorie diet.

Substitution
Use 1/3 cup Irish cream nondairy creamer (or 1/4 cup half-and-half plus 2 tablespoons cold coffee and 1 teaspoon almond extract) for the Irish cream liqueur.

How-To
Line baking pan with foil to make cleanup and cutting bars easy.

Special Touch
Garnish in a snap by using whipped cream from a pressurized can found in the dairy secition of the supermarket.

Confetti Corned Beef Hash

Skillet-fast hash with meat and potatoes has been a mainstay dinner dish for generations.

Prep Time:25 min
Start to Finish:25 min
Makes:4 servings

2 tablespoons butter or margarine
1 1/2 cups cut-up cooked corned beef or lean cooked beef
2 tablespoons chopped fresh parsley
1 teaspoon chopped fresh or 1/4 teaspoon dried thyme leaves
2 medium potatoes, cooked and chopped (2 cups)
1 small bell pepper, chopped (1/2 cup)
4 medium green onions, sliced (1/4 cup)
2 hard-cooked eggs, chopped

1. In 10-inch nonstick skillet, heat butter over medium heat. Stir in remaining ingredients.
2. Cook uncovered 8 to 10 minutes, turning frequently, until hot.

Zap the potatoes in the microwave to cook them quickly for this recipe. Two potatoes will take only about 5 minutes.

Sorry, I'm not totally coherent this morning.

By trains, I mean that I'm not driving and I won't have a trunk to pack stuff in. I have to haul it all around. I'll be walking about 6 blocks in the slosh to get to my elevated train, which I'll ride into the city to hook up with Metro North (lugging a couple of bags all the way).

I believe that the convention is running free shuttles from the station to the hotel, so I won't have to slog through much at that point.

Actually, if the slow had been heavy and started overnight last night, the elevated trains actually don't run. They can't make it up the hills from the underground portions of their lines. But that's not the case today, thankfully.
