Welcome To the Canteen Cook-Off Shake Rattle and Roll Jerry Lee Lewis Chubby Checker Bill Haley Come on, Mojo! Quit slacking and participate, will ya? (Talk about a slacker!) Ahem! Now where were we? Oh Yeah! This is a fun, friendly cooking contest open to anyone who would like to participate! There will be prizes! Imagine dat! First, second and third prizes, and honorable mention! The prizes are cookbooks from Ms. B's extensive collection! First prize: Patti Labelle's Lite Cuisine Second prize: Greatest ever Thai Recipes Third Prize: An appetite for Passion Honorable mention: Pizza by James McNair ** Winners will be announced two weeks from tonight! ** Entries can be main course, desserts, or side dishes! ** Please post your entries to this thread by midnight, EST on Feb. 17, 2006. ** Make sure Ms.Behavin is in the "To" line of your post to be considered for a prize! Woo-hoo! Our panel of impartial (?) judges will have the final say! I love cooking with wine! Sometimes I even put it in the food! Have fun!!! We will never forget who we owe our Freedom to! We are here first and foremost for the Troops! Please, no politics in The Canteen! We want the Troops to be able to relax, relate and rest! To: MS.BEHAVIN
Banana Cake 2 cups all-purpose flour
1 ½ cups sugar
1 ½ teaspoons baking powder
¾ teaspoon baking soda
3 large bananas
½ cup buttermilk or sour milk
½ cup shortening
2 eggs
1 teaspoon vanilla Oven 350 degrees
In a bowl combine flour, sugar, baking powder, baking soda, and ½ teaspoon salt. Add banana, buttermilk, shortening, eggs and vanilla. Beat with an electric mixer on low speed until combined. Beat on medium speed for 3 minutes.
Pour batter into 2 greased and floured 8x1 ½ or 9x1 ½ inch round baking pans. Bake in a 350 degree oven for 30 to 35 min., or till a toothpick comes out clean. Cool on racks for 10 minutes. Remove from pans; cool on racks. Serves 12.
Milk Chocolate (or Vanilla Frosting)
*** For double layer cake, may I suggest a double recipe for the frosting.
Whip 1 Egg White Until Stiff
Mix in Bowl: ¼ lb Butter, ½ Cup Crisco until fluffy
Sift into mixture: 1 cup well packed powdered sugar & mix well
Then add in egg white & 1 TSP vanilla
Then…
Bring to a boil: ¼ cup milk
Add milk a little at a time with beaters at medium speed
Add cocoa for milk chocolate. The more you add the darker the frosting will be.

I love it too my & cook it maybe once a week. I told Biglook that I was talking to a lady from HI a while back & when I told her I loved tilapia she said..."You eat that"..."we think of that like eating goldfish"! lol
I guess what we get is farm raised. It's a good white fish. I cooked sole tonight....not my fav cuz it is too delicate!

I bet the pear trees are lovely! The Sweet Acacia is in bloom now. It smells so nice but seems to really mess with the sinusus! lol

One of my favorites: You need tortillas, shredded Monterey Jack and salsa (I like LaVictoria's Salsa Suprema). Warm tortillas in the microwave for 10 seconds so they're nice and warm and soft. Leaving one inch on each side fill the center of the tortilla with a small handful of shredded Monterey Jack and a couple of teaspoons of salsa. Fold and roll into a burrito. Flatten. Fry in scorch-free margarine or olive oil on medium heat until dark golden brown on each side. MmmmMmmm!
