2 cups all-purpose flour
1 ½ cups sugar
1 ½ teaspoons baking powder
¾ teaspoon baking soda
3 large bananas
½ cup buttermilk or sour milk
½ cup shortening
2 eggs
1 teaspoon vanilla Oven 350 degrees
In a bowl combine flour, sugar, baking powder, baking soda, and ½ teaspoon salt. Add banana, buttermilk, shortening, eggs and vanilla. Beat with an electric mixer on low speed until combined. Beat on medium speed for 3 minutes.
Pour batter into 2 greased and floured 8x1 ½ or 9x1 ½ inch round baking pans. Bake in a 350 degree oven for 30 to 35 min., or till a toothpick comes out clean. Cool on racks for 10 minutes. Remove from pans; cool on racks. Serves 12.
Milk Chocolate (or Vanilla Frosting)
*** For double layer cake, may I suggest a double recipe for the frosting.
Whip 1 Egg White Until Stiff
Mix in Bowl: ¼ lb Butter, ½ Cup Crisco until fluffy
Sift into mixture: 1 cup well packed powdered sugar & mix well
Then add in egg white & 1 TSP vanilla
Then…
Bring to a boil: ¼ cup milk
Add milk a little at a time with beaters at medium speed
Add cocoa for milk chocolate. The more you add the darker the frosting will be.
