Welcome To the Canteen Cook-Off Shake Rattle and Roll Jerry Lee Lewis Chubby Checker Bill Haley Come on, Mojo! Quit slacking and participate, will ya? (Talk about a slacker!) Ahem! Now where were we? Oh Yeah! This is a fun, friendly cooking contest open to anyone who would like to participate! There will be prizes! Imagine dat! First, second and third prizes, and honorable mention! The prizes are cookbooks from Ms. B's extensive collection! First prize: Patti Labelle's Lite Cuisine Second prize: Greatest ever Thai Recipes Third Prize: An appetite for Passion Honorable mention: Pizza by James McNair ** Winners will be announced two weeks from tonight! ** Entries can be main course, desserts, or side dishes! ** Please post your entries to this thread by midnight, EST on Feb. 17, 2006. ** Make sure Ms.Behavin is in the "To" line of your post to be considered for a prize! Woo-hoo! Our panel of impartial (?) judges will have the final say! I love cooking with wine! Sometimes I even put it in the food! Have fun!!! We will never forget who we owe our Freedom to! Tin Can Chowder a la Redneck
1 10-3/4 oz can condensed cream of mushroom soup
1 soup can reconstituted dry milk
1 tablespoon Wesson oil
1 can oysters, drained
1 can tuna in water, drained
A good shake of black pepper
Mix. Heat. Eat.

This is one of my very favorite recipes and is pretty easy.
Quilted Cheesy Cornbread
1 pkg (about 8 1/2 oz) corn muffin mix
1 egg
3/4 c. sour cream
1/4 c. chopped pimento
1/4 c. green pepper, finely chopped (mild or hot, your choice)
1/2 t. garlic powder
1/4 lb. cheese, your choice, cut into strips
Line 8-inch square pan with foil; grease foil. In medium bowl, combine muffin mix, egg, sour cream, pimento pepper, and garlic powder; mix well (about half a minute). Spread evenly in prepared pan. Arrange cheese strips on top of batter in crisscross rows about 1 inch apart. Bake 20 minutes or until lightly browned. Serve warm.

It's very hot.
I made a milder version for church pot-luck last week. Two mild McCormick Chili packets, medium heat Pace Picante sauce, and one can of hot RoTel Tomatoes. No pickled Jalapenos!
The original version could have been part of the line-up in in LaurenMarlowe's chili-taster joke early in the thread! (Or was that LJ who posted that story?)

Chocolate Eclair Dessert
2 3 oz packages French Vanilla Pudding (or whatever suits your fancy - I like banana)
3 cups milk
Beat according to directions on the box.
Add 8 oz Cool Whip (fat or skinny)
Line bottom of 9 x 13 pan with however many whole graham crackers as it takes.
Pour in ½ the pudding. Add another layer of crackers and add the other ½ of the pudding. Then add one more later of crackers.
Topping.......best if you double it!
Melt in the microwave
3 Tablespoons oleo
3 Tablespoons milk
3 level Tablespoons cocoa
1 Tablespoon oil
Add 1 ½ cups powdered sugar
2 Tablespoons cornstarch
A drop of vanilla (or orange or cherry)
Beat until smooth and spread over the pudding and crackers
Chill over night

I missed that story. Guess I'd better backtrack and pick it up. I was running late so just jumped in. My hubby would love it full-blast. He even uses Goldstarbrother's "Napalm" and has survived! LOL!
