Welcome To the Canteen Cook-Off Shake Rattle and Roll Jerry Lee Lewis Chubby Checker Bill Haley Come on, Mojo! Quit slacking and participate, will ya? (Talk about a slacker!) Ahem! Now where were we? Oh Yeah! This is a fun, friendly cooking contest open to anyone who would like to participate! There will be prizes! Imagine dat! First, second and third prizes, and honorable mention! The prizes are cookbooks from Ms. B's extensive collection! First prize: Patti Labelle's Lite Cuisine Second prize: Greatest ever Thai Recipes Third Prize: An appetite for Passion Honorable mention: Pizza by James McNair ** Winners will be announced two weeks from tonight! ** Entries can be main course, desserts, or side dishes! ** Please post your entries to this thread by midnight, EST on Feb. 17, 2006. ** Make sure Ms.Behavin is in the "To" line of your post to be considered for a prize! Woo-hoo! Our panel of impartial (?) judges will have the final say! I love cooking with wine! Sometimes I even put it in the food! Have fun!!! We will never forget who we owe our Freedom to! Nicks Pasta:
(Nick did the wedding soup recipie too)
1 lb penne pasta cooked
2 bunches asparagus
4 lg portabella mushrooms
1 large orange or yellow bell pepper
4-6 cloves of garlic, crushed
6 greenonions chopped fine
1/2 cup chicken stock(non fat low sodium) add more if required
3 tblsp good olive oil
Dash or two of a good white wine
Cchop asparagus, mushrooms,and bell pepper into smal pieces and set aside.
in a frying pan, saute onions and garlic in olive oil till onion is transluscent. add chicken stock, mushrooms, asparagus and peppers add wine and cook veggies al dente.
Add pasta to the pan and mix, than serve with:
Grated romano or Locatelli cheese

I love this recipe.. It was fun to read, too!
Thanks for appreciating the directions. It really is fun to make, each person gets to build their own enchilada - don't like green onions? Don't add them in! ;-)
I should say we only did the mushrooms once. I could easily leave them out.
Anything else that sounds vaguely like a Mexican cuisine ingredient should be considered.
My recipe is a bit from memory as my gals have gone stark raving veggie - my BBQ is my son's and my only refuge except on Thanksgiving when she'll happily cook a turkey with all the trimmings and St Pat's when she'll do corned beef and sourkraut. Go figure. ;-)
Anyway I hope the recipe gets out to lots of people - it really is good. Do you need my address now for all the prizes? If so, just FReepmail me. ;-) Just so you know - I submitted this recipe for posterity and wish more recipes read like mine (for the guys)! A quarter tsp of what? Is that a teaspoon or a tablespoon! Sheesh!
