I used to get this concotion in sandiego that was corn tortillas in a baking dishfollowed by with 2 eggs cooked just soft and runny under chorizo( the real stuff! not grocery store stuff) and topped with soft white cheese.
It was baked in the oven and served with TX toast all ooey and gooey and hot....yum!
