Cub #3 has decided to make a Hummingbird Cake for the feast this year.

It will be his first year doing something by himself rather than just serving as vegetable chopper and bottle washer. I am so proud of him.

I made this Mrs. Fields Pecan Pie Bar recipe recently, and I think it seems better than the one they listed. The only thing I did different was to halve the vanilla and add bourbon (or rum) in its place. It was very very good, and my friends all loved the bars.

A salad I do NOT remember the name of:

A box of PISTACHIO instant pudding
A can of crushed pineapple
a container of COOL WHIP

MIX THE DRY PUDDING MIX DIRECTLY INTO the crushed pineapple. STIR well. Cool in refrigerator or freezer-—but do not freeze.

Fold Cool whip into above. SERVE

Can multiply as necessary.

Ribbon salad in a tree mould.

Tricky but great.

Green, yellow and red jello, with the fruit or fruit juice in them, layered. The yellow is mixed with cool whip and light cream cheese.

The layers stick if you don’t let them cool too long before layering them. And what a sight when unmoulded. Used to watch my sainted mother in awe.

Avocado Chocolate Pudding [Divinely delicious and healthy!]

Ingredients

• 3 Ripe Avocados
• 1 cup Dutched Cocoa Powder (Anthony’s Organic is a good brand)
• 1 cup half&half or cream/milk mixture
• 1/3 cup + 1 TBS honey
• 1 tsp Ceylon Cinnamon (Anthony’s Organic is a good brand)
• 1/2 tsp Vanilla Extract
• 1/2 tsp salt

Preparation

Scoop, pit and dice Avocados. Add diced Avocados and rest of ingredients to food processor bowl with S-blade.

Use S-blade to blend all ingredients until no Avocado bits are visible, stopping occasionally to scrape down sides of bowl with a spatula.

Transfer pudding from food processor bowl into container and refrigerate until ready to use.

Garnish with ripened banana slices, fresh raspberries, fresh pineapple bits, Black Walnuts and/or Chocolate Chips.

[recipe is easy to adjust up or down depending upon number of avocados used]
