NATIONAL CHEESE CURD DAY

On October 15, National Cheese Curd Day celebrates the velvety goodness of cheese curds.

Cheese Curds are unique, funky, snackable little pieces of yellow or white Wisconsin cheddar cheese. Many restaurants coat and deep-fry them to a golden brown. When you bite into one, first expect a warm buttery crunch on the outside. The next delicious taste will be an ooey-gooey burst of dairyland delicacy on the inside.

What are they? Well, cheesemaking naturally creates cheese curds. Fresh ones squeak when you bite into them. Cheesemakers create different flavors to appease the growing number of people enjoying cheese curds.

Serve cheese curds in a variety of ways to reap the flavor benefits! Of course, you can always eat them fresh. Another includes the all-time favorite, deep-fried. Cheddar Cheese Curds with Roasted Tomato Coulis
Curds are a specialty in dairy farming and cheese making states like Wisconsin.
Chef Govind Armstrong Post & Beam. LA, deep-fries them for a cheesy appetizer.

Ing Coulis: 1 oz. fresh oregano sprigs (1/2 bunch) 1 oz. fresh thyme sprigs (1/2 bunch) plus 1 tbl chopped thyme 1 oz. fresh cilantro sprigs (1/2 bunch) 1/2 oz. fresh parsley sprigs 8 med. tomatoes, cored 1 head garlic, split 3 tbl olive oil, divided Cheese curds: 2 cups panko 2 tsp. cornstarch 1 tsp. cayenne 1 cup flour 4 eggs, well beaten 1 lb. cheddar cheese curds (1-1 ½-in. size) 1 cup fresh parsley sprigs

Steps Coulis: Soak herb sprigs in cold water 20 min. Drizzle tomatoes and garlic w/ tbl olive oil. Make a circular bed of herbs on heated grill. Arrange tomatoes and garlic in a pyramid atop herbs. Foil over to seal in heat. Grill 30 minutes, tomatoes are roasted and slightly charred and garlic is just softening. Remove from grill.

Curds Squeeze garlic into pan. Add tomatoes and 2 tablespoons olive oil. On med, simmer 15 minutes, tossing tomato skin that rise, then processor. S/p. Place in ice bath to cool.

In clean food processor, grind breadcrumbs, cornstarch, cayenne and tbl chp thyme. Place crumbs in pie plate. Pour beaten eggs into another pie plate and flour into a third pie plate. Dredge cheese curds in flour, then egg and finally, breadcrumb mixture. Place cheese curds on baking sheet and set in freezer for 20 minutes. Heat 3 inches veg oil to 365-375 F. Fry parsley leaves crisp; drain. Fry cheese curds in batches til crisp and warmed thru. S/p. Spoon crisp curds onto fried parsley. Top with coulis. Serve.

A&W and Culver’s have cheese curds. Arby’s has mozzarella sticks as does White Castle.

Fresh cheese curds from the time they are made are still warm and when you chew them they actually squeak in your teeth a little bit. Magically good!

These are not the breaded fried ones (which are nice too!) You get them from a cheese factory that sell them fresh made.

Whenever I used to pass the cheese factory in Bandon, OR during open hours, I’d stop and get a few packages of their flavored cheddars and a pound or so of fresh cheese curds. Tillamook is good, but Bandon was better.
