Defend your ground. The best way to deal with a moose is by 1/4ing it. The hind part is the fastest to process. Outside of freezing, canning is an excellent choice. You can include seasoning for flavor as well. Yum!

For anyone curious, dressed and butchered, it works out to around 500 lbs of meat. Moose steaks. Moose chops. Moose sausages. Moose burgers. Moose shishkabob. Moose casserole. Moose stroganoff (I’ve actually eaten that). Moose Wellington. Ground moose in a croquette with a fine wine reduction moose sauce. You’re snowbound in a cabin with drifts up to the eaves and what’s for dinner? Yeah, MOOSE. No wonder they get cabin fever and have at one another with double-bit axes up there.
