What You Need to Know About MSG (Monosodium Glutamate)

Long-time readers of Earth Clinic have probably read a post or two from KT, a strong believer in being proactive about health.

KT has written extensively on Earth Clinic about the link between Monosodium Glutamate (MSG) and the brain because of the devastating impact MSG has had on her own body from consuming small amounts of MSG found in supplement capsules made of gelatin.

This article explains exactly what MSG is, the surprisingly common foods that contain it (like mayonnaise), MSG sensitivity and side effects, and just how easy it is for you to consume it without ever knowing it. What is MSG?

MSG, the abbreviation for monosodium glutamate, is a flavor enhancer used to make something taste better.

Monosodium glutamate is a product manufactured in factories. The glutamate in MSG functions as a neurotransmitter, sending signals between cells.

You can’t avoid glutamate. It’s one of the most abundant amino acids in our bodies but is also considered a non-essential amino acid because our bodies produce all we need. Glutamates – Bound vs. Free

Glutamates can be either bound to other amino acids as a protein or exist independently.

Free glutamate is what makes foods taste better. It can be freed from protein in a number of ways. Curing or fermenting greatly increases the amount of free glutamate in a food: 337 mg. of free glutamate in 100 grams of cured ham vs. only 10 mg. of free glutamate in fresh pork. Huge difference.

Free glutamate is also what causes adverse reactions when MSG is eaten in sufficient quantity to cause reactions. Pure MSG – Umami, the Fifth Flavor

MSG naturally occurs in many food exp sea weed, mushrooms and tomatos

You need less of it to spark up the taste of food, than table salt. So, it’s good for people with hypertension.

Try it. It perks up your food esp steaks. Use it instead or salt.

Try a taste test with table salt and Accent.

It’s a much maligned condiment. Some people have headaches from it and other reactions, and they should avoid it.

Good description - it’s a “weird” feeling, not quite headachy, but slightly spacy. I don’t eat much take-out as result.

WTF? Putting words in someones’ mouth?
I live with pain every single day. I’m
pretty sure it’s not MSG that’s causing it.
Can’t handle it? Don’t ingest it. That
doesn’t mean the rest of those that suffer
no ill effects from it’s use should have to
put up with bland or off tasting food.
Should we outlaw peanut butter?

That’s one of my migraine triggers too. It found out decades ago that if I ate Chinese restaurant food one day followed by eating the leftovers the next, I would get cluster migraines that would last for days.

I got goats. They’ll soon eradicate the poison ivy/oak/sumac here.

Keeping the MSG though because I think of it like the goats think of poison “__________”, yummy.

I do try and create that unami with natural recipe ingredients and cooking methods. The smoker does a real good job of it.

My friend literally swells up and almost passes out if she injests food that contains MSG.

Those sound exactly like my symptoms.

Especially the weird feeling. It is impossible to describe. You feel awful but there are no clear cut, definitive symptoms to point to, no pain, but just feel AWFUL!!!!!

Double-plus FALSE. Chicken fat, for one thing, is loaded with it. But since it's natural, foods such as soups based on chicken stock don't have to list it. Just one thing about MSG that I had to learn when I became hypersensitive to it in my '50s.

Which actually explains why I can eat chicken breast and not the dark meat or drink the broth.

The Earthclinic website suggests stirring some Cream of Tartar into water and drinking, for symptom relief of these after overingestion of MSG.

Or 500/1000 mg of Taurine, an amino acid. Friends have found seems to work fastest if opening capsules into fluid - not milk, milk is protein, made up of amino acids, and competes w taurine for assimilation- and drinking.

Note: Has MSG in Best Foods Mayonnaise, so if say, chicken or tuna salad sandwiches produce these effects, this may be why. Many lunchmeats, disguised on label as “Spices, natural flavor, artificial flavors, or yeast extracts”. Any added Glutamine anywhere. Which means possibly energy drinks. Also watch for any product which label says “no added msg”, because it may already be in product.

It may not even be MSG that is causing some people problems. A lot of foods that are high in MSG are also high in tyramine.
