Belgioiso Extra Sharp Provolone is my favorite. Asiago is very nice too.

May not be the healthiest but I only like the barest minimum mozarrella fully melted on my pizza...or melted jack/cheddar on baked potato skins (with LOTS of bacon and chives!) :)

Otherwise not a cheese fan at all.

Americans do not know cheeze.

I go to Mexico frequently and the supermarkets have cheese sections that are more extravagant than meat departments in the USA. And everyday cheese like Manchego, Asiago, Panela and Menonita blow the best cheese you can get here out of the water, much less THEIR top shelf stuff.

I always bring cheese back with me from Mexico.

Does anyone know if American cheese is even a cheese? I asked a butcher once and he could not tell me

I make a salad every day: lettuce tomatoes, cuke. Add cheese: Basil Feta from Aldi. Or Swiss or Mozzarella. Also add a couple chopped up hard boiled eggs.

So it's a real high protein salad.

For Vitamin K2, both MK4 and MK7, it is:

1. Aged Gouda, roughly a half year or less
2. Munster

https://www.ncbi.nlm.nih.gov/pmc/articles/PMC5946231/

Those would be what I optimized to get.

I found the ingredient/method for the best creamy macaroni and cheese where the cheese proteins from various cheeses will blend perfectly. Basically, instead of making a bechamel sauce and adding the cheeses to that, you leave out the flour and butter and add sodium citrate to your milk or water and bring to a slight boil then simmer and add the cheeses. 25 grams per 3 cups of liquid. It’s about 25 ml by volume, its not that sensitive that you have to have it exact. Try it, you’ll love it. Fool proof creamy. Perfect for making cheese dips too.
