NATIONAL ACORN SQUASH DAY

On September 7th, National Acorn Squash Day celebrates the autumn flavors found in what is also known as pepper squash.

Even though it is considered a winter squash, acorn squash belongs to the same species as all summer squashes including zucchini and yellow crookneck squash.

The most common variety comes in a mostly green outer shell, often with a splotch of orange on its side or top. However, varieties, including the Golden Acorn and the White Acorn, offer gardeners and cooks options. This versatile squash also grows in variegated color.

The squirrels in my yard are happy as this an acorn bearing year for our oak trees. And I’ve been playing “squash the acorn” with my car on the driveway.

I would be much more inclined to buy acorn squash more often, if they would go back to pricing per squash, instead of by the pound.

Love my home grown acorn squash.

Slice in half turn upside down on a foil covered cookie sheet. Pour some water in. Steam at 400 for 25 minutes. Flip. Toss a pat of butter and a teaspoon of brown sugar for another 30.

Taste like heaven. Great with a roast chicken. 😋

All around yummy. Too expensive in the store.

I’ve got acorn squash coming out my ears this year. Have never had a crop this good. My dehydrator is working overtime. Have found that air frying the seeds in coconut oil with a little garlic salt is quite the tasty treat.

Split in half, clean out the seeds, fill the centers with butter and brown sugar and bake at 400 for 1:15.

I’n off sugar now and this is one of the fall meals I am going to miss.

I got a similar recipe from a neighbor - only to cook them straight up - use the brown sugar and butter and fill the rest of the cavity with sherry.

Husband says it keeps him from divorcing me.

Acorn Squash is a favorite. Baked with butter, brown sugar, cinnamon and nutmeg (or punkin pie spice), it makes for a dessert dish as well as a side dish.

Turning them over with water in the pan steams them and helps reduce the time in the oven. Made them both ways.

That’s why I like farmers’ ’ markets for things like squash. They generally charge per piece, like a dollar a squash, where the supermarket wants 1.29 per pound. Plus the produce is a lot fresher.
