I’m not sure. I know there are allowances for some animal products and, I think, dairy products in a vegetarian diet. As long as an animal wasn’t slaughtered for it
I don’t think eggs and dairy are acceptable in a vegan diet.
3 weeks tops, 2 weeks best.
Here’s what I do....and not suggesting this is for everybody.
I purchase a dozen eggs and refrigerate. There are times over the next two to three weeks that I need eggs, for a recipe, breakfast...etc.
After that time period elapses I will use the eggs I have not used to make deviled eggs.
This way I have an egg or two or three when I need and when they will soon go bad, make a batch of deviled eggs.
The stale eggs, first of all, peel much easier than fresh eggs. Second, who has two or three eggs laying around? I live by myself so my system has be with eggs that are fresh when needed then ready to devil for friend or myself.
My recipe for deviled eggs you ask?
Boil stale eggs for about 20-25 minutes.
Peel, split in half, scoop out yolk and put in small bowl. Put white egg halves in container.
Add about a half a cup of mayo for under a dozen eggs. about half of the mayo amount add with spicy mustard. Shake some seasoned salt on top.
Using a fork, break up the yolk and mix with the mayo and mustard. Then scoop into the waiting egg white and eat them up within the week.
This method is not for everybody but my deviled eggs are almost always a hit and it’s really a simple recipe.
You get cracked leaking eggs that way with the leaking whites poached out streamers...nasty.
Start with cold water just covering eggs in pot bring to boil, remove from heat keep lid on and lest rest for 7 mins, remove eggs and plunge in iced water, THAT’s your thermal shock right there, let them cool down to touch...hardboiled eggs ready for whatever.
Wow! I’m glad you are still around. I’m trying really hard not to get in that shape. I eat as healthfully as I can but since I hurt my foot I don’t exercise as much as I did. If physical therapy does it’s job I hope to get back to my former activity level.
My mom used to make those for parties. Yum! And yes, they disappeared pretty quickly.

That’s how I do it except I wait 10 minutes. Works perfect every time.
I also don’t pay much attention to the Use by date. As long as the eggs don’t float when you put them in cold water you can still use them.
That’s pretty cheap.
Up here they are nowhere near that cheap, bordering on pretty expensive.
Thankfully, I get free ones from a buddy. I was going to build a coop for the farm this year, but lumber prices are nuts.
Eggs are great, we’ve all known this, but what about bacon? heh
I have never met one single person who will not hoover up a fresh plate of deviled eggs.
And the beauty part is....the mayo is just more eggs and oil. An elegant symmetry.

Love eggs. I have my go to brands at the grocery, both pricey, but at least I’m relatively sure they are not from the large corporation farms.
I’m also lucky, I have a couple folks who can supply me with fresh eggs on a regular basis. Nothing like a fresh egg.
And it works. Since I have had eggs (three eggs) in my daily diet, my cholesterol has gone down and has stayed down. Not to mention plenty of other so-called high cholesterol foods like cheese, shrimp and liver.
Many people do not understand that dietary cholesterol can be a good thing. In the absence of dietary cholesterol, your body will make its own. And not the good kind either.
All bets are off though if your dietary cholesterol is obtained through processed foods and hydrogenated oils like margarine for example.
I keep 6+ dozen in the fridge at all times. We eat 31 eggs a week on average if we have no company, or potato salad.
A secret is let out, mine lay 7-18 a day depending. A few days of 7 means Mr Hatchet is making a visit soon.
Yes, salt and baking soda in the water, 3 1/2 minutes for nice soft boiled...mmmmmm yum...of course coooling them off at the minute mark you wish.
How to you open a soft boiled egg? Is it just like you would a hard cooked egg?
