It is said that Howard Cosell introduced nachos to most of America during a 1978 Monday Night Football broadcast.
I LOVE nachos. They should include: flour chips, seasoned ground beef, maybe some refried beans as a bottom layer, black olives, jalapeno slices, tiny tomato chunks..... lots of cheese. Must have dips/add-ons: Salsa, sour cream, and guacamole. I make my “instant” version by keeping small baggies of seasoned ground beef in the freezer, enough for one plate/one meal for one (me)… then thaw the meat, assemble in a layer or two on a plate, and one minute or so in the microwave.... Not ideal, but certainly acceptable, and better than NOT having nachos!
I don’t care for odd versions, though, such as “Italian nachos” at Old Chicago, or along that line.
I love Nachos, too; but this story sounds a lot like the story of the creation of the Caesar Salad:

My IQ is well about average but have absolutely no idea what a nacho is. Probably Mexican.
I hate Mexican food. Have been there several times. The more expensive the hotel, the sicker I got.
Reminds me of the 'Buena Vista' in SF, they claim they invented the "Irish coffee drink" I mentioned that to a bartender at ;Fidler's green, on Columbus a few blocks away, He laughed and said: "I'm pretty sure Irish men have been putting whiskey in their coffee long before the BV came around.
Similar could be said about putting cheese on chips.
It’s sad that people are told bad things about anchovies. I never had anchovies for years. But one side tasted them They are great. And healthy too.

Corn tortillas, quarter, deep fry, salt, drain, heap with cheese, stick under broiler until melty. Top with pickled jalapenos.
Salsa and guacamole on the side.
NO devils lettuce in the guacamole.
Ok... if you must.... but keep it on your side of the table.
Try Green Goddess dressing - home made, of course. (I haven’t seen it bottled in my supermarkets in a long time, but I think you can still find it in some places.)
