In Thailand a corn sundae was very popular. The ice creame was Foremost soft with strata layers of corn throughout. I’ve forgotten the topping.

I’m half Czech genetically, I’m American by birth and I ate ethnically approved Austro-Hungarian fare at massive family reunion feeds. I understand the lineage and boy did the Czechs get screwed by the allies during WWII...

Took my living a while south of the Mason-Dixon line to be exposed to and grow fond of grits. Trying to turn yellow grits into white by rinsing in lye might not give the fine character that naturally grown corn lends to the palate, eh?

Actually, after being reminded by the exchange, I hustled downstairs and cooked up a batch of grits which I greatly enjoyed. Corn bread is another matter to which I think I'll address my attention today!

Those are very reasonable scenarios. But the cleverness and inventiveness of “primitive” peoples is still impressive and humbling. Take the development of maize from an insignificant plant, or dozens of potato varieties from a plant whose foliage and young green tubers are full of toxic alkaloids. Today the same adaptations would be expected to require a huge team of Archer Daniels Midland scientists and a budget in 8 to 9 figures.

I would just use the same source I plan on using - the internet. One thing you have to be careful about is throwing out the first alcohol produced (lower boiling temp). That’s the stuff that makes you go blind or kills you.

I grew some corn one year - and if you eat it within an hour of picking it it’s flat out delicious... To imitate that flavor boil corn in water with a fourth of a cup of powdered milk added...(no, fresh milk doesn’t work for some reason)

I was fortunate it to never go hungry.

As far as my mom and grandparents during the Spanish civil war. There were terrible times of hunger. But, as I indicated ‘table’ Corn was not even around them to be on the limited ‘menu’.

Not sure why some people here are so annoyed about this. And yes. There’s an obvious annoyance. Field corn is what they had. It was grown for pigs.
