OK. Question on pressure canning beef.
I decided to try some raw pack beef and the jars where I didnt add any water at all, have a huge amount of head space.
Is that normal and will it be a problem?
If I add water to the jar before processing, how much would be good? About 1/4 of the way up?
Thats what it looks like its short.
According to my canning book it’s not supposed to be a problem. Other than being a bit dry and icky color. However, I don’t like it-so I add water. I have sometimes turned those upside down for a while before opening them.
I always add some water, but I’ve never measured how much I just fill the jar with beef and add the water-leaving a lot of space for juices to cook out. I also put about a half teaspoon of beef base or bullion in each jar before adding the water.
If I was guessing, I’d say about 1/4 of the way up on the jar would be good.
I loved the Minnesota midgets that I used to get. I don’t know what the heck these were. I got them from the same seed company, but I sure think they messed up some how, because what I got was not true to past experiences with that variety.
I liked them as the perfect size to eat and not have to put a bunch of left over in the refrigerator.
I am making sure all the seeds I order are open pollinated.
I am interested in trying amaranth.
I hear that the leaves can be eaten like spinach, and when it goes to seed, you can use it as a grain substitute.
What varieties would be good for that?
Does anyone have any experience with that?
Well, I only tried a few jars so it shouldnt be much of a problem if it doesnt work out well.
I like the raw pack because its less work but I dont want to add too much water and have it ooze out and ruin the seal. I hate the uncertainty.
The advantage of the hot pack is that you fill the jars as full as you want and then it doesnt change.
we haven’t had rain since very early in July....very tired of the hot, dry, smoky conditions....rain would be a nice change...
if every body who lived in towns would just devote some lawn space for fresh veggies, what a difference in health, air quality,and happiness...
I like the raw pack too. So far, I have had no problems, but I don’t fill all the way to the top. Don’t really measure it either. Just eyeball it.
I’m horrible that way with all my cooking. Granny always cooked the same way, and I just picked it up. Sometimes I would want a recipe from her—it was funny trying to figure out measures with a hand full of this that and the other or a pinch or smidge. LOL
Praying for all the people in California, Oregon, Washington, and where ever those fires are. Last time it was this hot was in the early 1900s, IIRC-from the article I read.

I have an aloe vera that is huge-around 3 feet tall. I don’t know what to do with it. It’s too big to bring in. I had wanted a small aloe vera to keep in the kitchen window for burns.
Hubby saw this huge plant and bought it for me as a gift. Is there anyway to harvest it so I can not waste it? It has some babies that I can put in pots to use in the kitchen.
They did not come from China. And they were clearly labeled. I’m not sure what the deal was. LOL
I have donated quite a few big plans over the years to our local botanic gardens. An aloe that big would be a nice attraction I would think.
I’ve been wondering the same thing. It looks like it would also be a very pretty plant.
That’s a good idea, but hubby’s feelings would be hurt if I did that. To him you grow it forever, or harvest it for use. He’s just weird that way. Ha Ha.
Thank you. I just got an alert from my city that the air quality is “extremely unhealthy” and may cause heart attacks!
We are inside - with the dogs and cat - with our air filters running and the a/c on - which also has air filters on it. The sky has been glowing orange all day and ash is falling everywhere. It looks like it’s foggy outside but it is from all the smoke.
We all have sore throats. Hope it’s over soon. I heard some people have died in the fire - I’ll send up prayers for them.
