We’ve got extra space in our garage that could easily be a ‘canning kitchen’. Keep the heat out of the house in the summertime! Need to have the extra electrical stuff done for a stove there though. Between the cost of an ‘extra stove’ and that it’s a ‘wait for a while’ project right now. But definitely something on our minds.

I just looked at all american canners on amazon. Everything from the 21.5qt on down is sold out, delivery expected may 18. The big ones delivery is may 12.

So, the panic hoarders have also discovered canning.

Dehydrators sold out early at our hardware stores.

We use ours for tenderizing beef before adding to stews, beef tips, lentils, stuffed peppers, vegetables, etc. We used to can a lot, not too much nowadays, since I haven't gardened much in the last couple of years.

I buy freeze dried vegetables, but have everything we need if our freezers go out or we lose electricity for an extended period of time and need to can everything.

Our last power outage lasted for 5 days due to a F3 tornado that missed us by less than 400 yards. I ran my generator for a solid five days without stopping - fueled it hot.

Ya, we’ll be the slow spenders until we see if tech is being imported regularly again. If not, long term prospects for paychecks are poor.

WASHINGTON, April 20 - White House adviser Peter Navarro charged on Monday that China may be withholding data about early coronavirus infections because it wants to win the commercial race to create a vaccine.

The United States, which has been the country worst affected by coronavirus pandemic according to official statistics, has repeatedly calling on Beijing to share early data on the outbreak, which began in China.

“One of the reasons that they may not have let us in and given us the data on this virus early, is they’re racing to get a vaccine and they think this is just a competitive business race, it’s a business proposition so that they can sell the vaccines to the world,” Navarro told Fox Business Network.

Losing power is one thing I am nervous about.

We live in the stix and storms are a real thing.

If I could downsize to one freezer it would be a good thing :)

LOL...yes...the water bath canners hold a LOT of water!

Mine has the gauge.....which, you’re supposed to get inspected by the county extention office, every year.

Well, ours was closed, when I was ready to can....so I rolled the dice, went ahead with my canning, and....thankfully, all was well.

Now, I’m praying that the freezers hang in there, or, I’ll be rolling it out, again, fast.

May do some more meat canning, regardless, in a few weeks. Luckily, I have plenty of jars/seals. Those things are nearly impossible to find, now.

Get yourself a generator. Especially if you have NG at your residence. A generator will get you through most power outages, except for a SHTF event.

That’s a near miss....and, that’s a long stretch on the generator.

Thank the Lord, for both.

The longest our generator ran was after Harvey.

Almost two weeks. :- /

We were thankful to have it.

Those things are nearly impossible to find, now.

We started using the reusable ones Glenn Beck used to advertise. They work well.

Yes!! It did. We kept praying that it would hang in there, and it did.

As soon as things were more back to normal (roads cleared, power on, etc.) we had it serviced.

We do before every hurricane season, but....that year...it had extra service.

Our area used to have a lot of power outages, in addition to storms/hurricanes, so it’s paid for itself...in reassurance, time and again.

I bought a case of the rings and lids on sale at the end of the summer 2018. So far I’ve only opened 2 of those. I also have a nice stash of the lids. I just have one freezer left to go through and will can a lot of that stuff to make way for another load of meat and veggies later on.

We ordered a new dehydrator, so we’ll be using those quite a bit too. I didn’t want to take a chance on the old dehydrator going out. It didn’t have a temperature adjustment, timer, fruit leather trays and the new one does.

When we bought our pressure canner, we ordered extra seal rings and stuff right away, so we’d have those when needed.
