Great suggestions.

I had already soaked the Black Eyed Peas, but I cooked them the rest of the way in ham broth that I canned from the Christmas ham. Like you, I found a spiral ham on sale at Aldi's. They must have ordered way too many because they were on sale even before Christmas. Last year I bought one on sale after Christmas, cooked it in a roasting bag, and it wasn't all dried out like I thought spiral hams usually get. And it's so much easier to use then the ones that you have to spice yourselves.

I added some carrots, celery, onions, and ham pieces. I used the bay leaf like you said, and then added a bit of thyme because lately I add it to everything, I have a YUuge bush growing in a pot. Then a little bit of kale that keeps growing in the garden. This is the longest I've been able to have a Winter Garden, it just hasn't got cold enough for long enough yet. Wish I planted more beets. I digress, the Black Eyed Peas are very tasty oh, best yet! Thanks for the recipe.
