June 4 (UPI) -- Eating a chicken could raise a person's "bad cholesterol" to similar levels as eating a steak, contradicting long-thought ideas about health differences between the meats, new research suggests.
Researchers found eating white meat poultry may raise low-density lipoprotein levels in the same way as red meat, according to a study published Tuesday in the Journal of Clinical Nutrition. That elevation in bad cholesterol after eating chicken can occur with or without consuming any saturated fat.
"When we planned this study, we expected red meat to have a more adverse effect on blood cholesterol levels than white meat, but we were surprised that this was not the case -- their effects on cholesterol are identical when saturated fat levels are equivalent," Ronald Krauss, director of atherosclerosis research at Children's Hospital Oakland Research Institute and study senior author, said in a news release.
The Animal and Plant Protein and Cardiovascular Health trial showed eating a heavy diet of red meat or white meat led to higher blood cholesterol levels for the consumer than eating the same amount of plant proteins.
The new findings contradict guidelines from health groups that eating poultry is better for heart health than red meat, suggesting there is less health difference between the two proteins than previously thought. In its dietary guidelines, the federal government promotes eating less red meat and poultry, suggesting people increase the amount of vegetables and other underconsumed food groups they eat.
The researchers say eating proteins from dairy, legumes and vegetables provide the best cholesterol benefit.
"Our results indicate that current advice to restrict red meat and not white meat should not be based only on their effects on blood cholesterol," Krauss said. "Indeed, other effects of red meat consumption could contribute to heart disease, and these effects should be explored in more detail in an effort to improve health."
I had the same sort of experience years ago. Now I average more than 2 eggs a day and my cholesterol remains in the normal range. Sometimes I'll even cook up a pound of chicken livers with some onions and mushrooms in my cast iron skillet. So good.
Those who "watch" their dietary cholesterol are doing so in vain. For in the absence of dietary cholesterol, your body will simply make cholesterol on its own. And usually that is not a good result.
You are correct, but I was referring more to commercial “off the shelf” dressing.

Any doctor that isn’t trying to scam their patients with kickbacks from medicine sales will tell their patients that their liver makes the cholesterol high, and that they can eat nothing but cardboard and water and their levels will still be high.
Why? 100% pure fat and the most calorie dense food on the planet.
Having pure fat on your salad actually enables you to absorb the nutrients a lot better.
Of course it does. This is a no brainer. All animal flesh, including seafood and dairy raise cholesterol and cause all sorts of chronic disease.

Nature created olives. Nature did not create olive oil to be consumed outside of the olive. What you are eating is highly processed fat. Absolutely terrible for you.
I disagree. I’ve had olive oil daily for most of my life. Have near perfect blood work and I’m in perfect health.
I don’t get it. We’ve always known there is substantial cholesterol in poultry. Like so much else, moderation is key.
And two pieces of dry white toast.
Here in Oklahoma, our three major food groups are sugar, salt, and grease.
Funny how they finally got around to this “conclusion”...the “science” of what’s good and bad to eat is as phony as that which they use to claim man-made climate change....
Oh well, at least we still have fat free yogurt!
