Weekly Cooking (and related issues) Thread

When we came home tonight, my husband smelled cooking coming from a neighbor’s place, and said it reminded him of a childhood favorite, Tuna Noodle Casserole. He hasn’t made it in a long time, but grew up on a recipe that used the typical canned-soup approach.

On the food network site, Pioneer Woman Ree Drummond has a from-scratch recipe that looks a lot better:

Another recipe from prepared items that we used to make was Corned Beef Hash, using canned corn beef and mashed potatoes. But if you are having corned beef for St. Patrick’s day, here’s a more interesting recipe for your leftovers, from the Happy Money Saver site:

Parties. I’m in charge of appetizers, work deserts.

Brought into work today a double chocolate buttermilk German chocolate cake. It was a thank you for my fellow employees helping me out as I was coming back from the flu. I owed them big time. They were great.

Not sure what dilly beans are.

Sounds good, and thyme is my favorite. Although my New Year’s resolution is to use more marjoram this year. I think I under appreciate it. Plus I always think I’m out so I have about four jars :-(

Did he actually lose any weight?

We’ve always had two, sometimes three, cats. We’ve never figured out how to diet the fat one while feeding the others adequately.

Good idea! My appetizer file is pathetically small. I never know what to make to start the meal off when people come over.

My favorite fixer upper is to add some horseradish to mac & cheese. I use Ina Garten’s mac & cheese recipe, but we always think mac & cheese seems to be a little dull. The horseradish is just perfect and you can’t really tell that’s what it is. I think it also cuts the richness a little. I had some people over and they raved about it but nobody could figure out the “secret” ingredient.

Nothing ever matches up to the first time you ate it.

I’m still trying to find a pizza like the one from the first pizza place in our neighborhood, back in the early 1960s - very thin, crispy crust, not too much sauce; and oblong, not round.

(Or even a supermarket ice cream like we had as kids; I think you have to make that yourself, now.)

I think he actually did in the beginning! He went from about 12 pounds to 11. I’m trying to get him to his optimum weight of 10, but now that he has discovered people food it’s all over. He gets so excited when we eat, twirling in circles, running over meowing, and staring at me with those big Persian eyes....It’s real hard to say no… So I don’t.

I’ll remember that.

We get a cheddar-horseradish spread at the local grocery that is really great. I want to try and duplicate that.

Put something on your plate that’s cat-healthy - some little canned shrimps or tuna, perhaps. He’ll probably know the difference, but might be mollified long enough for you to scarf up your food ;-)

lol I never thought about being sneaky with him. I think it would work because he just likes to eat anything. He’s no longer picky.

I never was very good with herbs but have a few favs. The first time I ever used thyme, I followed a recipe in BH&G or Betty Crocker cookbook for fish in a glass bread pan.

It called for white fish, white sauce, a sprinkle of thyme, sliced American cheese, all in about 3 layers and baked. I wouldn't mind having some of that again.

We used to get frozen perch and halibut but hard to find now. Would work for cod, red snapper possibly. Some fish is too expensive to make a casserole out of.

I did start seasoning my own stuffing and loved it. Winged it. Used sage, thyme, marjoram, parsley, and some savory, maybe a couple sprinkles of some others I have. Rosemary too if I ever have it.

Yeah, I have bunches of jars. And found out some get dated and you need toss them and buy fresh. I have a fresh bottle of Spice Islands thyme I've been using. And probably 3 or four older ones.

A one-time bf made the best meatloaf leftovers. I used to use oatmeal but switched to preferably Fr or It bread crumbs soaked in a little milk (makes it so tender, also for meatballs). For a topping, depends, my neighbor used to drape slices of bacon over. I like to rub with chili sauce or both.

Anyway, it makes yummy sandwiches. But here's what my bf did with it. Slices gently heated in amL of liquid, then spread with undiluted Golden Mushroom soup I only ever liked for this, with a little oregano sprinkled over the top. My grandson went crazy over it.
