Weekly Cooking (and related issues) Thread

When we came home tonight, my husband smelled cooking coming from a neighbor’s place, and said it reminded him of a childhood favorite, Tuna Noodle Casserole. He hasn’t made it in a long time, but grew up on a recipe that used the typical canned-soup approach.

On the food network site, Pioneer Woman Ree Drummond has a from-scratch recipe that looks a lot better:

Another recipe from prepared items that we used to make was Corned Beef Hash, using canned corn beef and mashed potatoes. But if you are having corned beef for St. Patrick’s day, here’s a more interesting recipe for your leftovers, from the Happy Money Saver site:

Another substitute is using tuna in place of crab in crab cakes. Tuna cakes.

My family's favorite, 5-can casserole. Maybe I posted it before, think I did because I remember some discussion about Chicken and Rice Soup (some don't like it).

1 large can tuna, drained and broken up
1 can Chicken with Rice Soup or Chicken and Stars, or Chicken Noodle
1 can Cream of Mushroom Soup
1 small can evaporated milk
1/2 package minus some to sprinkle on top LaChoy Chinese noodles (save the other half for another batch or snack on them

Lightly spray 3 quart casserole or 9X9 square baking pan.
Empty contents of Cr of Mushroom soup into the pan
Slowly stir in contents of Chicken and Rice Soup (so the mushroom won't be clumpy)
Stir in the small can of evaporated milk
Add broken up tuna, stir
Add Chinese noodles minus the ones for the top

Bake at 325 or so for 25 minutes or until bubbly.
Open oven and sprinkle reserved noodles over the top
I like to lightly press them into the casserole
Return to oven and bake for another 5 or so minutes

I could eat some right now but don't have all the stuff

But this is very close:

Used to be food.com, don't know what it is now but one of the two photos is one I saved with the recipe

My photo is the one with the buttered bread crumbs as I don't use potato chips.

Pretty much how I did mine but I like real butter better for most things now. Don't need to brown the onions. Don't use chopped celery. Can use Cr Celery coup in place of the Cr Chicken but I prefer the ones given..

And I guess the thyme won't hurt, don't think I ever used it for this. You can tweak to taste.

My husband grew up with Beagles, and loves them.

I’ve been looking at Boston Terrier, for my ‘retirement’ companion - The Gentleman Dog ;-)

Would love to have one of the Giants (the well-raised Bernese are about the sweetest dogs that I’ve ever met) or a sighthound. But I’m getting up in years, and probably couldn’t handle those...

That’s the only time I love green beans but...

A friend requested his Hanukah/Christmas present be pickled green beans. Well I save pickle juice for cooking and pickled them in that. Dang they were tasty.

P.S. Can we do appetizers some day? You guys are so good with great ideas!

Aliska, you reminded me of La Choy Chicken Chow Mein. I loved that when I was a kid - it came in two cans stuck together. I think you can still buy it (?)

And a special surprise I stumbled across in my meanderings a week or so ago, was enchanted with them:

It happened when I was looking for a sugar cookie made with cr of tartar, drop cookie, crispy with air bubbles pockets. Looked and looked, landed on pinterest and found these Christmas trees) couldn't find anything quite right for the drop ones. Luckily I went through my old recipe file and found the ones a farm wife had made and brought to our family reunion). After I found my recipe (and I hugged it close to my heart in gratitude I still had it - also a yummy ginger-molasses drop cookie with it). I found similar on the web but will use mine because it has more cr of tartar.

And I found what I think is an exact match for the cookie cutter she used (a reviewer wanted one and couldn't find it )(remember the white horse? haven't seen anything like that yet.)

Nice blog she's got there, some other recipes look good.

These are so pretty but out-of-season, will post anyway.

Lots of detailed instructions and more photos for all of it at link. Amazon has those pearly sugar things too. And little squeeze bottles. Need some meringue powder for the frosting with the powdered sugar.

My husband uses El Pato Tomato Sauce w/Jalapeno around and over his meatloaf. It’s great - find it in the ethnic section, or a Hispanic grocery.

Sounds delicious & easy! I almost never cook w/ condensed soup, but for tuna casserole I used 2 cans of mushroom & 1 can of cheddar. And loads of onions, I love onions. It is still in the oven & I’m starving.

Glad your brother is on the mend. It was so exciting when we had the LA Choy when I was a kid. Looking back it was so exotic & delicious!

I haven't seen any lately but I think you can. It looks like my store has 42 ounce cans, two taped together but not like it used to be. They have beef and chicken versions with the vegetables separate for $3.99. No problem to buy the noodles separately. Be nice to have some on hand as my American version from scratch I described on FR another type of thread some time back but it's a lot of work to get it all right, worth it though.

And they still sell the canned-style LaChoy noodles which will keep fresher longer.

Oh one time I got a different brand of noodles which were a little bubbly from the frying. LaChoy is much better imo. Thanks for the memory, used to love it when my sister and I had to fix our own meals ("You divide, I'll choose") That was funny. It had to be as evenly divided as possible or we quibbled about it lol. It wasn't scrapping over the Chow Mein but a can of soup and Kraft dinner.

We used to have this quick-fix rice stuff. Can't get the name of it now. No it was the small elbow macaroni, cooked, then add one can of tomato paste, some butter and this packet of seasoning. That stuff was red hot but for that only I would tolerate it.

My mom used to make them in her pressure cooker a long time ago. I never was too fond of them. Your version might be good but I'm hungry for some cabbage rolls.

I got some frozen meatballs and am going to buy a jar of Italian marinara, not too spicy I hope, and make meatball sandwiches in French Bread. Subway has them, and I love their bread and sauce, but they use ground turkey or some substitute which is not as good as some beef ones I've had.

That sounds good. I bet you could substitute canned salmon it would be even better. Can you please post the whole recipe, for those of us that don’t have the Betty Crocker version

My big male cat never liked people food at all until I put him on a diet. Then he started eating everything in sight, even potato chips, salami, and he tries to get to the dog food bowl before the dog.
