When we came home tonight, my husband smelled cooking coming from a neighbors place, and said it reminded him of a childhood favorite, Tuna Noodle Casserole. He hasnt made it in a long time, but grew up on a recipe that used the typical canned-soup approach.
On the food network site, Pioneer Woman Ree Drummond has a from-scratch recipe that looks a lot better:

Another recipe from prepared items that we used to make was Corned Beef Hash, using canned corn beef and mashed potatoes. But if you are having corned beef for St. Patricks day, heres a more interesting recipe for your leftovers, from the Happy Money Saver site:

I haven't had any of those in years, no, decades. Thanks for reminding me. I am going to make up a batch.
Beef broth
Fried vegetables (tonight, many: potatoes, onion, beet, cauliflower, mushroom, squash, fennel, celery root, etc.)
Tomatoes, roasted
Summer Sweet Peppers, roasted (some Hungarian variety we grew)
1 clove garlic
pinch caraway
paprika (copious)
salt
Something like that. Top with sour cream (classic) or yogurt (alternative).
Hubby came up with our tried and true recipe. I call it the fork lift casserole, it’s heavy.
Take the Betty Crocker meatloaf recipe and substitute two things.
1. substitute tuna for beef. Z
2. substitute oatmeal for breadcrumbs.
Skip the tomato sauce and cook it in a loaf pan. When it’s done cooking stick it in the refrigerator.
The next day pull it out of the refrigerator slice it make sandwiches. I use mayo and yellow mustard.
My mom could cook. For authenticity use white bread. Do not toast.
Ever had a raw onion sandwich? I kick it up with toasted DIY ciabatta bread and mayo, salt & pepper. I use sweet onions slabbed like a burger. Sometimes I braise the onion slice a little on both sides (optional).

Our cat loved the gizzards and liver from the turkey, she would talk while she ate it. Otherwise it was just cat food that interested her although she would love the occasional dropped piece of popcorn.

lived in England for a while. Loved the bangers and mash, cottage pie, fish and chips (with, vinegar or mayo.)
Probably the salt. We had a cat who was crazy about potato chips, and it scared me. Cats don’t really ‘chew’ a lot, and I didn’t like those sharp pieces going down his throat. We had to be careful he didn’t get into them.
Well, we’ve had some nights here recently where it would have been perfect. Had to crank up the heat tonight, too.
About 20 years ago I discovered a meatloaf recipe that was topped with a can or 2 of Campbell’s tomato soup where you mix in some garlic powder, onion powder and pepper. I love it.
Campbell’s soup recipe are comfort food. So are hamburger stroganoff and sarma (cabbage rolls)
Colemans dry mustard is one of my go-tos. I’ll throw it into mine next time.
Got a British traditional cook book. Think I should pull it out.

Have you read her book, ‘High Heels to Tractor Wheels?’ Really cute - about meeting her husband and their romance and her initial troubles becoming a Ranch Wife. Loved it. Not High Literature, but I couldn’t put it down and read it in two days. So. Funny. :)
P.S. I’m not crazy for Tuna Casserole unless it has GOBS of crushed potato chips on top. And you need to use decent water-packed tuna! Whatever the EnviroWeenies say we CAN’T use? Use that tuna, LOL! :)
I make meatloaf with oatmeal too but instead of tomato juice I use V8 juice. Last time I made it I used the Spicy Hot V8 for the first time and it was delicious. I will definitely use it again.
Regardless that I’ve taken some joshing for it here, I love the Green Bean Casserole with the Campbell’s soup and canned onions.
Yes, she’s a very good cook. I’ve seen her TV show now and then, and really like her whole approach.
I think with her she liked the butter!
