If you like finding double yolks in your eggs, then you want the extra large or jumbo. Otherwise, stick with the medium or large.

For recipes, you should stick with medium or large.

When I boil eggs, I heat the water slowly and use a thermometer. The egg yolk should set at around 190 F. I keep them at 190-195F for a few minutes to heat the egg entirely, then turn off the water. I’ve heard that putting baking soda in the water will keep the egg from sticking to the shell, but in practice, I find that aging the eggs is a much better option. When I was a kid, we would put the eggs (we had a commercial chicken ranch) in the fridge about 2 weeks before Easter, and they would peel beautifully after cooking (and coloring!).

Unless you are buying quail eggs it does not really matter. Steam your eggs instead of boiling them and they will never be overcooked.

A nice curry dipping sauce make them extra special.

I buy my eggs hard boiled. It’s not expensive. I have 14 chickens 8 laying eggs and the other 4 soon. I drown in eggs but can’t ever peel’em when I hard boil them.

Use large or extra large size eggs at room temp eggs with a timer. 3 1/2ish minutes for soft boiled without slime. I get serious about some things. Always food related.

Love over easy with ketchup. Scrambled with smoked salmon and hollandaise and a shot of lemon and chives is fab!

Here I thought you were asking advice on what size eggs to throw at rotten politicians. The best size for that purpose is the one you can throw the farthest and with the most accuracy.
