I talked to my allergist about it and they said that wheat just does that to some people and they don’t know why.
All I know is what it did for me.
The first time I tried it, I ate everything else I wanted in the way of grains, rice, oats, popcorn, etc. Wheat was the only thing I cut out.
The second time was because of this mast cell disorder where I react to food. I switched to oatmeal and was able to eat more and dropped 60 pounds in no time. My cholesterol also dropped like a rock. 100 points.
What’s nice now is that there are a LOT more wheat alternatives out there so that avoiding it will be a lot easier.

I had a corned beef sandwich the other day that would make a “believer” of an atheist. Hot, right from the corning barrel, trimmed, on real rye with mustard (then added coleslaw and mayo/ketchup to make it a Reuben.).
Also had a fresh “coddie” (mustard on crackers) and a kosher hot dog wrapped in kosher bologna and mustard on a real hotdog roll.
All for less than $13.00. Weiss’s deli on Lombard Street in East Baltimore, my old haunt since the early 50’s.
