While processing backyard chickens last summer, Sveta Yamin-Pasternak thought how nice it would be to bury those fresh carcasses in the ground and let microorganisms preserve her food the easy way. When the time was right, she could dig up the fermented fowl and enjoy them.

Fermenting veggies is very good for you (can't remember all the reasons why, but it made enough of an impression on me to go through the tedious process of collecting whey as a starter).
I'm a big fan of fermented grape juice myself. I prefer well-fermented and aged juice of the Cabernet Sauvignon grape, especially that from Bordeaux, France.
That is very VERY good for you ;-).
FWIW, my grandfather, who was Polish, used to leave bottles of whole milk out at room temperature for 3 or 4 days until they became all curdled and sour and nasty. Turns out that is considered a delicacy by some Central Europeans, Grandpa included.

The Koreans as a group are the healthiest folks I've ever come across and, based on what I've seen served up, they eat kimchi at virtually every meal. Of course, eating enough garlic to make it ooze out your pores could be a factor as well.

Yes, they eat kimchi. However, most Koreans I know won't touch fermented skate wing, another Korean 'delicacy.' Something about the uric acid turning into ammonia that makes it difficult to appreciate on the palate (palate? I understand it's difficult to appreciate having in the same room).
All meat is aged. When we sent our Angus off to slaughter, it was then delivered to our butcher in town and hung for 7 days before cutting into meat and wrapped for the freezer. His locker was full of many different kinds of meat, meat cows, dairy cow, deer etc. (I think it was only 7 days, that was a long time ago)
Why don’t they have to eat all of that so-called healthy,low fat diet stuff that is being foisted on the rest of us,including our children?
How come Michelle O hasn’t gone there and exhorted the people to include more fresh,healthy garden grown fruits and veggies in their diet? Tsk. All that fat and oil!

Me too, but I really like sauerkraut and some of the finest meat I’ve has been well aged (under refrigeration).
