Sweet corn is three weeks early here in Minnesota. Just had some tiny kernel, bi-color supersweet two days ago. Mmmm-mmmm!

Sorry to hear about the lack of the good stuff down your way. It stinks when you wait all year for it. I remember some skunky years here.

Fine here in Jersey.

“Mexican” Corn on the Cob
Serves 4

* 4 ears fresh corn, husked and stem removed

* 2 Tbsp butter

* 2 Tbsp mayonnaise

* ¾ cup Cotija cheese, crumbled (or grated Parmesan)

* Dash of cayenne pepper

* Salt and pepper to taste

Bring a large pot of water to a boil. Prepare an ice bath in a large bowl for the corn. When the water is boiling, add the corn and cook for 3 minutes. Immediately remove and plunge into an ice bath to stop cooking. Allow to sit in ice bath for 3-5 minutes. Remove to a dishcloth or paper towel to dry.

Turn a burner on high heat. Place the dried corncobs over the flame, turn occasionally allowing the corn to roast evenly and brown. When satisfied with color, remove corn and immediately coat each ear with ½ Tbsp butter followed by ½ Tbsp mayonnaise. Sprinkle generously with cheese then add seasonings. Serve warm.

U.S. is a big place, bub.

Here in Texas, most of us have had ample rain.

I hope you just forgot the sarcasm tag on your post.

Yeah. Me, too.

Think grasshoppers would make good biofuel?

Not many people understand what it is like to get lost in a field of corn.

I have lots of customers in that area, Wooster, Mansfield, Youngstown, Cuyahoga Falls, Medina, it is a much different part of the state though from the SW. You run out of Kentucky briar's around Columbus and start seeing a lot of folks with eastern European ancestry. The scenery is great and the people are still Buckeyes. O-H-...

Yes, but the more of the used to grow sweet corn is now being used to grow ethanol corn.

Total corn acreage this year is down from 2008 levels. And, when it comes to corn and ethanol - it's not a food OR fuel proposition, it's food AND fuel.

Your location says Texas.

Peak sweet corn maturity was three weeks ago here in extreme southeast Kansas.

I’ll bet the sweet corn rush in Texas was a week or two before that.

Sorry, almost forgot. Figure $3 per dozen at the local roadside markets. I love the stuff, just don’t have very good luck growing it :(
