You are so right. And a lot of people don’t realize that vital information on fat content regarding ground meat (thanks for posting it). I just got some ground Jennio turkey at the store (love that stuff).
I prefer beef so I always buy the 96/4 ground beef -

I’m just a little paranoid that they’ll extend the romaine recall to include some sold in grocery stores. :)
America’s Test Kitchen Light and Healthy had an intriguing recipe for Stuffed Zucchini... I haven’t tried it but it looks really good.
It’s stuffed with couscous made with chicken broth, feta cheese, a little chopped basil, and kalamata olives.
You cut the top third off the zucchini, microwave the zucchini on high for 4-8 minutes, and proceed to fill the cooked zucchini with the couscous mixture. Yum.
I did miss Texas, but I’ve been back for six years now.

Forgot to add that after you microwave the zucchini, scoop out the inside of the zucchini. You’ll put the cooked couscous into it (use about 1/2 cup feta cheese, the olives, and basil to sprinkle in the cooked couscous, let sit about 4 min.).
Fill the zucchini w/ the couscous mixture. Then put 1/4 cup feta on top of each filled zuk. Bake about 10 minutes on 475 F. Yum.
I was adding the steps in my head, but I appreciate you laid ‘em out, in case anyone else hadn’t prepared stuffed zukes before. It’s the olives and feta combo that got my mouth watering! :)
