Oh it will be great...very moist when brined. I brined for years I understand, and maybe incorrectly so, that you can't do gravy if you use that method. Did you ever do gravy when you were doing a brine?

Now you're talking! Was that picture taken today?
Don't I wish -last year. I'm the knothead hunting them with the bow - wipeout a $8 broadhead for $2 worth of breast. Fraid to say there isn't a lot of meat on an Idaho wild turkey. Typical westcoast bird, all gristle and no bulk.

Typical westcoast bird, all gristle and no bulk. I'm told that our Virginia turkeys are (usually) pretty good. You ought to try out here sometime.

I'd love to. I have a sister inlaw in Dahlgren. One of these days I'll set up a visit and a hunt. Last time I visited was smack dab in the middle of the DC Sniper crap. Not so much fun. From what I understand those big ol fat Virginia birds will make your day, if you can get one.

Yes, I do gravy. Just don’t add any salt at all to the drippings and go by taste to season.
I also stuff the bird instead of using vegetables. Never had a problem with too salty tasting. I make up extra stuffing and bake alone in the oven.

Have you tasted the tofurky? I hear you either love it or hate it, and at 14$, I didn’t want to take the chance.
I had a nice homemade vegan meatloaf and was very happy with it.
