I did this last year and a lot of good recipes were posted so I thought I'd try it again. Take one and/or leave one!
What you said.
A couple comments on the phyllo leaves.
They are very thin, like tissue paper.
They come in essentially a stack and are rolled up.
When they are thawed out, unroll them and don’t try to handle them individually. Just count off what you need, about 7, as being exact isn’t critical.
Gently lift the 7 sheets together off the top of the stack, using both hands and lift it from underneath. You kind of have to cradle the leaves. They’re far less likely to tear that way, although they might some, but it doesn’t really matter, not like it would for pie crust.
Just make sure they are places next to each other with no gaps between the pieces. It does take a little practice to get used to handling them but as long as you are careful, they shouldn’t self-destruct.
If you crumple them, you’re done. They can fold gently but disintegrate when crumpled.
Uh oh! I’m older than you and in love with Tim Tebow.
I make cranberry sauce like my mother did. I use about a cup of sugar, half an orange cut up with the skin on & a bag of cranberries. I sort the cranberries to get rid of yucky ones. Then toss it all in my vita mix & let it mix. Sometimes I need more OJ so I add a little, sometimes I need a bit more sugar...My family loves it. I like the fact I don't have to cook it, just chill it.
That cranberry-apple pie does sound good. Yum!
Ooh this sounds really good!
If I’m feeling brave enough I’ll try this pie.

I usually cook mine according to the directions on the bag.
I buy them on sale in the fall, cook up a big batch and can a bunch.
I need to can since we are getting lots of deer meat & my friend tells me it tastes great canned. I've been making lots of deer meat jerky.
Thanks to all of you.
Metmom it sounds delicious. I know what you mean about phyllo, it takes some patience but is so worth it. I’m going to try this.
Jeremiah I’d love to see what you’ve got.
Chris, they aren’t vegan, and see my post #65 for a different mac & cheese recipe. If you have a good one let me know.
You need a pressure canner for meat, you know.
We have some friends who are going to try to get us some venison this year and I want to pressure can some. I’ve never done meat before, although I do a lot of soup stock, but I’ve also heard that pressure canned meat is excellent.
And you don’t have to worry about losing the whole batch if the freezer goes.
It’s always a toss up with me as to my favorite holiday meal; Easter Dinner or Thanksgiving Dinner? I like Easter candy better, and until they come up with some really solid, tradtitional Thansgiving Candy, I gotta go with Easter. ;)
Thanksgiving is a very close second. ;)
I make a cottage cheese loaf for the main dish for my vegetarian kids.
Here’s the closest I could find on the ‘net, except you crush the Special K cereal before putting it into the mix. I’m trying to think of what you could sub for the G Washington packets....broth packets maybe?? If so, no added salt.

If you can find it, there’s this box of veggie turkey slices that Worthington sells (i think it’s Worthington) and I heat them and take one slice and fold it over a couple of TBLs of stuffing, sort of like a taco, and drizzle gravy over it and serve. It’s pretty and it’s one serving, they can always have another if they want more.

meeeee
All you need is a heat source for a hot meal. No heat? At least you would have something to eat other than water bath canned tomatoes or other veggies!
More Christmas gifts from your kitchen:

No turtle soup!!!!!!
Thank you everyone for all the recipes contributed! They all sound (and in some cases, look) delicious! Ping your friends...let’s get some more.
For more exposure, nw_arizona_granny would be the one to ping.
BTW, anyone know what ever happened to appleseed? He was running a surviavlist ping list and just dropped out some time ago.
