Some people make zucchini bread. I haven’t tasted it but I would say its really good! Bet you’ve made it!

Yes indeed, a favorite! Here’s mine.

Zucchini Bread

1 cup applesauce
1/2 cup oil (Those who sweat the calories can use the ‘approved’ types...I guess)
1 cup honey (select the honey for the flavor you like, clover or the like)
3 eggs
2 cups shredded zucchini
2 1/2 tsp. vanilla
3 cups whole wheat flour
1/2 cup flaxseed meal
1 tsp. salt
1/2 tsp. baking powder
1 T. cinnamon
1/2 cup chopped nuts, optional

Beat applesauce, oil, and honey together in a large bowl. Add eggs, zucchini, and vanilla.
In a separate bowl, combine flour, salt, baking powder, and cinnamon.
Add to wet ingredients along with nuts.
Beat until just combined.
Pour into two greased loaf pans.

Bake at 350 for 45 minutes, or until a toothpick comes out clean.
Shake the loaf pans as soon as you take them out of the oven for easy removal, (loosens the loaf easily.)
Yield: 2 good loaves, one to share with the family, (and one to calmly, quietly enjoy for yourself!)

Cats and dogs really don’t like clothes on of any kind, do they? But we humans love it!

Well L.J., they turned out really good but now I have a mess to clean up. When I finished eating I went outside and sat on the patio a while and talked to my SIL on the telephone. Its harder for me now to clean up the mess! I have enough left over for tomorrow!

The store crust was plain graham cracker. I made one tonite with chocolate graham crackers but I think I’lltry oreos next time. Two envelopes of flavor is definitely better! I think the cool whip should be 8 oz but hubby bought 12—I just guestimated. :)

I was thinking—dangerous, I know—that you could really dress this dessert up with some fresh raspberries/kiwis or peaches, depending on what flavor drink mix you used.

Not sure how good a cook I am, but no one has ever left my table less then full and smiling.

As for recipes, I have a large collection, and if you ever need something just let me know, I either have a recipe or know where to find one. I have a few friends who cook, some professionally and they are also veritably founts of information and recipes.

I LOVE Oreo Crust! But, I also love Graham Cracker crust. I’ve never tried “Chocolate Graham Crackers”.

Three old ladies were sitting on a bench outside a nursing home. About then an old man walked by, and one of  the old ladies said, "We bet we can tell how old you are."

The old man said "There ain't no way you can guess it."

One of the old ladies said: "Sure we can. Drop your pants!"

He did. The three ladies looked at him for a few moments and then the other lady said, "Take off your  underwear".

The guy dropped his underwear and the old ladies stared at him for a while longer and then they all piped up and said, "You're 84 years old!!"

The old man was stunned. "Amazing. How did you guess that?"

The old ladies laughed, "You told us yesterday".

D: Come on, give me a look...

M: Well OK then. This will be THE big breakthrough in data presentation
and storage. Here, let me show you. See this wafer-thin white display unit?

D: What? is that a full display?? That thin?

M: Yep. And see this pointer here? When I move it across the display,
it leaves a trail, so I can write directly on the display, and the
display will store the image.

D: That's fantastic. Where is the drive unit?

M: This is it. It doesn't need any other resources. No power, no
batteries, no nothing.

D: What an incredible discovery...

M: Now look at this.

D: Oh, your closing the unit. Well, I can do that as well with my notebook.

M: Hey, yes, but look I can fold it many times. See? Now it fits in my wallet.

D: So you can always carry it with you...Brilliant!  Hey, let me
hold it for a moment? Gee, it's so light!!! I'm dreaming!!

M: No, you're not dreaming. Look, now I open it up again. See the image
is still there. Now watch...

D: Hey, you're ripping the unit to pieces. What a waste!!

M: Yes, but look, I can hold them together, and the image is restored.
This material is fantastic.

D: Incredible. Can't do that with my flashcard. Ha, ha... What are you
doing now? You're jumping up and down in the display!... Oh, my God,
it's still working! Say Mike what is the safe storage time for the unit?

M: Oh, they say it will be a few centuries at least, perhaps even longer
than a thousand years without too much degradation.

D: Gee, must be some stable magnetic fields they use.

M: Yes. The boys at Microsoft-Intel claim it will do away with
monitors, computers, notebooks... They'll release it early next year,
when they have finished the colour version. This is only a Black
and White gamma release.

D: What is it going to be called?

M: Paper35
