You should like bring any family outside the joint to come too, and dey can bring any tools dey like. We’s gonna see dat dis stays our country, no wannabes allowed here to ruin our thing here!

I take one large zucchini - (at least 8 - 10 inches long), cut it in half lengthwise, spoon out the seeds, and then stuff it with my meatloaf mixture - then bake. It is delicious, covered with marinara, and then mozerella cheese. when you slice it, you have a half moon shaped zucchini slice, with meatloaf, and cheese. Pour some of the extra sauce over it.

I suppose you could use smaller ones for individual servings, too!

I love Zucchinis, baked sliced into salads, fried in butter and added to about any dish you name. I had a great garden a while back and learned the lesson, plant only ONE zucchini plant. I was foolish and planted five! We supplied the local food shelf, several restaurants, a local commune, all the family, way too many neighbors and still had them left over! I have learned and now I deal with them most carefully!!!

My youngest son (now divorced) but his wife was Italian and she made an Italian Baked Zucchini and I can’t remember how she did it but it was mighty delicious and I remember it had a lot of Mozzarella cheese in it or on it (probably both) and the sauce of some kind (probably marinara). I bet the dish you told us about would be wonderful!

I think of her often. She and I got along really well! But she had one hot temper!

Very funny Johnn!

I can remember when many people I knew had gardens and they were always bringing me zucchini or asking me if I wanted some zucchini......It didn’t take me too long to figure it out! Some people make zucchini bread. I haven’t tasted it but I would say its really good! Bet you’ve made it!

Well, I would give my arm for some now. I’ve been pampering my stomach and it is already better. I have some oysters on ice in fridge that I need to fix tonight and I don’t know how that would be for my stomach. As much as I spent for those oysters and the dozen scallops, I can’t afford for them to go to waste.

Think I will go fix them now since its on my mind. Maybe I’ll just eat a very few and have some today and warm the rest up tomorrow in the oven. Its hard to eat just a few. But chicken noodle soup doesn’t stay with you too long but mighty good for the tummy!
