They don’t need to be boiled but the water does need to be hot enough to scald them before dropping them into cold water.
The skin will begin to split and that means they’re ready.

dip the tomatoes in the water boiling water for 20 to 30 seconds.
Skin should peel off easily.

I think that’s called ‘blanching’. Boil for a few minutes, dump in cold water, and then start peeling them. If that doesn’t work, just make a sauce using garlic and oil. Quicker, easier, and yummy too.

Yes you use boiling water but it only takes 10-20 seconds to get the skin off. Put them in the water and then take the tomatoes out put in ice water. The skin will peel right off!

Make an x on the bottom with a pairing knife, dip in boiling water for 45 seconds then into ice bath, should peel easily.

Why skin them? That is where a lot of the good stuff is. Or skin them but blend up the skins and kick them back into the sauce. I will never peel a potatoe. Never have. Dittos for tomatoes

I have seen Alton Brown roast roma tomatoes cut in half in a baking dish, then push them through a sieve which leaves the skins behind. You could also try the pepper method where you char the skins on a gas burner and then let them cool and the skins should slide right off.

Instead of peeling the tomatoes, try blending the sauce in the pot with a hand blender after it has cooked down a bit.
Makes a nice smooth sauce without the tedium of blanching and peeling tomatoes.

Quick way to peel tomato’s. bring a big pot of water to boil. Using the absolute sharpest knife you have, or a razor blade, put a X on the end opposite the stem.
Put in boiling water for 10-15 seconds and immediately place in ice water to cool.
Skin will peel right off.
