Yes you use boiling water but it only takes 10-20 seconds to get the skin off. Put them in the water and then take the tomatoes out put in ice water. The skin will peel right off!

Be careful when you lift the tomato out of the hot water and drop it in cold water to ‘pop’ off the skin. The meat inside is still hot.

Your right on the time...I would also split the skin with a paring knife if the skin was still a little tough...If the skin is not peeling well just dip for another 10 SECONDS.. Boiling them for minutes starts the cooking process and they can get too soft to peel
