To: All
Hard Rock Cafe Potato Soup
Ingredients: 8 Slices Bacon fried crisp
1 C. diced yellow onion
2/3 C. Flour
6 C. chicken broth
4 C. diced peeled baked potato
2 C. heavy cream
1/4 C. chopped fresh parsley
1 1/2 Tsp. Granulated garlic
1 1/2 Tsp. Dried basil
1 1/2 Tsp. Tabasco
1 1/2 Tsp. coarse black pepper
1 C. grated cheddar cheese
1/4 C. Diced green onion
Preparation: Chop bacon. Set aside. Cook onions in drippings over medium high heat until transparent.
Add flour stirring to prevent lumps. Cook for 3-5 minutes until mixture just begins to turn golden. Add broth (it helps if it is warm) gradually, stirring constantly with whisk until thickened.
Reduce heat to simmer and add potatoes, cream, bacon, parsley, garlic, basil, Tabasco, and black pepper.
Simmer 10 minutes. DO NOT BOIL. Add cheese and green onion. Stir until cheese melts.
This can be made ahead up to the point of adding the cheese and onion. Reheat the soup very slowly and gently. Be careful that it does not boil. Then add the cheese and green onion.

Hi, Amy! I Hope Everyone is having a Good Day. I Wrote this Poem to Go with a Pic I Snapped of a Squirrel, but, Lol, I'm not Very Good at it.

A Squirrel's Perspective
To me, Each Day is Fresh and New
Filled with Fun, and Things to Do
I'll Eat Pecans, I'll Climb a Tree;
Nothing is too Hard for me.
Way Up High, from Branch to Branch
I Leap and Fly on the King's Ranch.
The World is Good; I Love my Life;
Everything I see is mine!

My husband just walked in the room and asked what I was crying about now! I said ,”Here, read this”. He is a little weepy too. Thank you for sharing such a precious story. It sounds like something my boys would have done! They are not little guys any more but still are sweet! Jaycee , you are truly in the “Golden Years”. Your story was ice cream for my soul!

Thank you for your sweet comments. This story touched me also. My “little boys” are grown up men now with families of their own but they will always be our little boys in ‘our minds’, won’t they?
When they do right as young men, we know we did something right, don’t we?

Lost my sweet hubby about 4 years ago this May 23. Life will never be the same but God does give strength to carry on and laugh again.
