Happy Thanksgiving! Got Leftovers???

God Bless America!
Only in a great country like ours can we enjoy the blessings of freedom, prosperity, abundance, and still have leftovers... LOL
If your home is anything like ours, can you eat all day, and into the night, leave a tidy some of food, (like that G'dawful gooey cranberry stuff) and still have more food than what you had before you started. Look at your refrigerator, is it any room left... well is there??? LOL
Here are some suggestions for that Turkey and trimmings that are still around!.....

I do an even simpler one. Use left over turkey or chicken gravy if none, a basic white sauce.

Chop up turkey or chicken mix with gravy or sauce and cover with short crust pastry. Bake in oven until pastry is brown but not burnt.

Serve with boiled new potatoes and other veg of your choice.

I would think this is the bread pudding your friend from England is used to or is it bread and butter pudding?

Bread Pudding

This packed with fruit, spices and peel. It can be served warm as a pudding and any left overs can be served cold as you would a coffee cake or of course you could warm it up either in the oven or the microwave.

Prep time: 35 mins
Cooking time: 2 hours

Ingredients
8oz stale white bread
10 fluid oz milk
2oz candied peel
Peel of orange
peel of a lemon
4oz currants
2oz sultanas
3oz shredded beef suet (you can use vegetable suet or shortening if preferred)
2oz Demerara sugar
2 level teaspoon mixed spice such a pumpkin spice
1 large egg
Milk
Butter
Gated nutmeg
Caster sugar

Cut away all the crust from the bread. Break the bread into small pieces. Place in a large mixing bowl and pour over the milk; leave to soak for 20 mins.

Finely chop the candied peel or if not already chopped, grate the orange and lemon peel add to the bread and mix in.

Add the dried fruit, suet, sugar, and spice; blend well. Beat the egg and stir it into the mixture, which should have a dropping consistency. If necessary, add milk.

Spoon the bread mixture into a well greased 2 pint pie dish (remember British pints are 20oz so probably an American quart and half dish). Grate nutmeg over the top of the mixture.

Bake on the middle shelf of an oven heated to 350F mark 4 for 1 3/4 - 2 hours or until browned.

Serve hot or cold liberally sprinkled with caster sugar.

Thanks for the recipes (again!)

I saw this one a few years ago on one of Emril's TV shows, and it was all about using Thanksgiving leftovers...

Turkey Rubens

Needed:
Leftover sliced turkey
swiss cheese
creamy cole slaw
Rye bread
butter

Butter the outer side of the bread. Place one slice in pan on medium heat. Add your turkey, coleslaw, cheese, and the other slice of bread. Cover and allow to cook until the bottom slice of bread is golden brown. Flip and cover until the top slice is also golden brown, and the cheese is melted.

YUM!!!!!

Hey Carlo, got any good vegetarian recipes for over the holidays. My poor mother is tearing her hair out about what to cook for me while everyone else is eating Christmas goose. :)

Vegetarian? Heck, who needs to cook? Just go out onto the front yard and start grazing!

That jerky is really good. I've also made it with 1/4 Cup Soy sauce and 1/4 Cup Worcestershire sauce.

Greek seasoning is a special blend of spices that are common in Greek cooking, much like Curry Powder, Chili Powder, or BBQ spice.. Although there are variations to the following, this is the general accepted combination.. This combo is available in a premixed spice mix.. Combine all ingredients in a bowl, and transfer to an airtight container. Store in a cool, dark place.

 Turkey Enchiladas
   1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
   2. In a small bowl, combine the cheese, onion, and black olives.
   3. In a small skillet, heat enough oil to lightly coat one tortilla, and cook until soft. Remove and dip in enchilada sauce to coat.
   4. Add turkey and cheese mixture to center of tortilla, roll and place in the prepared dish. Repeat until bottom layer of pan is covered with enchiladas. Spread enough sauce over bottom layer to cover.
   5. Repeat process with a second layer; spread remaining sauce on top and sprinkle with remaining cheese mixture. Bake 20 minutes in the preheated oven, or until cheese is melted.

"Cavender's All Purpose Greek Seasoning" is also quite good if you don't wish to make your own.

Fantastic on baby back ribs.

Gary this is a simple recipe for an easy and fast Turkey Salad that will be a hit..

TURKEY SALAD
Sprinkle turkey with lemon juice. Chill several hours. 2 hours before serving, add celery, grapes, eggs and salad dressing.
Tip: Toasted Almonds, slivered are great in this recipe .. Sprinkled before serving..
