Freeper Kitchen: All I Need to Know I Learned From Emeril

Yesterday I watched Food TV. Emeril had the winners of his Italian cuisine contest on. Wow! There were some yummy dishes on there. One I need to make next week is a dish called Chicken Meatball Soup. Wine lovers will love it because you can use wine liberally in this dish.

I tape it...I saw it this morning at 3am..when I got up to watch the shuttle landing..stayed up for an hour utilthe scrubbed the second window..FYI.last night on Iron Chef American..on of the judges was CNN's Soldad O'Brien..

HG..on Emeril's show night..can you find/post the recipe for that sfiti..deep fried cheese balls..looked like great comfort food...

FWIW- that tribute to Julia they showed this weekend was fantastic.  What a treasure that lady was!

Alton Brown is clearly one of the best things on TV nowadays, let alone FoodTV. He's a "soft" liberal, or perhaps even a libertarian, but he has never made his politics an issue the way Mario Batali has (big Kerry supporter).

Next to Brown on FoodTV is Rachael Ray. A little too giggly for me, but good food fixed the way real people would fix it. Although a little Martha Stewart like in her presentation I also like the stuff Sandra Lee does on Semi Home Made and Giada De Laurentiis is growing on me with her remade/Americanized Italian recipes.

Sara Moulton is good if you want to see classic Julia Childs type cooking (she was a protege of Childs) and Bobby Flay, though stuck on himself, is generally informative, even if he is fairly one note. Michael Chiarello's Easy Entertaining show also usually has some good ideas that everyone can adapt.

Paula Dean's food is appealing, but her "southern hick" routine is wearing thin. Anthony Bourdain occassional appearances are sometimes entertaining, especially when he's in his "New Jersey" mode instead of first generation French.

And Emeril can be fun to watch, some, but he's mostly for entertainment. I don't think I can really learn much that I could apply from him.

Did I mention that I watch a lot of FoodTV? That, Fox and Friday night SciFi (recorded on my PC ala Tivo) pretty much sums up what I watch on TV nowadays.

Hey, and just for what it's worth, everyone know that Mark Summers guy, the host of Unwrapped? Well, a bigger liberal d-bag you'll never find. Called up Sean Hannity a couple of years ago and sounded like Al Franken.

He also was nam enough to call back the next day and apologize for being a jerk to Hannity. Or at least smart enough to know that he wasn't being paid for his political opinions and ticking off half your audience is never a good idea.

Well, that too. But what is most annoying is trying to follow what he is saying and doing while he talks about the next step with a repetition of descriptions and preparatory remarks all presented with long absentminded pauses between each right up to the moment he actually completes what it is... stirring, adding, carving...etc. 'Now all you need to do is...just add...you know...while you're adding .... as you add, because you need to add, or you could add some...then just add some... all you need to do is add some of ...etc.' OH BROTHER just do it and STFU Emeril!!! I have not decided if he is brain dead, disorganized or just on crack.

I'm watching cause Rachael's a cutie. I imagine there is a rather large male part of her audience who feel the same way. Yeah, it's nice to see how she sears a steak or chops herbs. But if she weren't giggly and cute, I wouldn't be watching.

Well, I can see what you're saying about RR, but she just hits me on a certain level.  Her recipes are okay.
 
Remember that guy, Jamie Oliver?  God I disliked him.  But his recipes were just disasters.  I should have known better than to take cooking advice from an English guy, especially when he'd occasionally accuse Americans of "mucking" dishes up.
 
One guy who I really liked was Ming Tsai.  What a cook that guy was (I think he's on Home and Garden now) but he couldn't put a recipe together that had less than 25 ingredients.  I was able to find that stuff because I live behind a Vietnamese grocery, and it turned out great, but boy was it ever expensive.
 
That Paula Dean.  It's no wonder she weighs as much as she does.  I remember I was watching her with a buddy of mine from the neighborhood, full blooded Italian who's worked in restuarants for 20 years.  Paula was making a "Real Spi-gett-uh Casserole".  My buddy nearly vomited.  Stick to what you know Paula, that's where your strengths lie.

I agree totally re: Good Eats. Alton Brown rocks. And Marc Summers is a weasel.

Giada, though -- she's pretty, sure, but that ubiquitous toothy grin seems a little put on to me. Rachael Ray seems more natural, less forced.

BTW, does anybody else think the 'Next Food Network Star' contest was PC-rigged for the gay couple ("Dan & Steve")?

That guy you 're talking about was so untidy and his place looked unclean. Actually, I really dislike watching people cook who have their hair long and loose, hanging in their faces and waving around all over the cooking and food preparation area. Cooks ought to be tidy and neat with their hair (men or women) tied up away from what they are doing. (Martha S., Rachel R, Barefoot Contessa and the Italian girl who likes to cook with her anatomy and her best 'put-on' smile, the two Fat Ladies... never saw anything so unkempt)

Or his lame joke about turning the temperature knob on the oven. He has needed new material for five years or so. His prior "Essence of Emeril" show (no audience, band, or tired "jokes") is pretty good.


"When he puts garlic in something, and the audience goes wild, that's a real show stopper."

Most people hate food that tastes too garlickly. I have never understood the cheering for "40 cloves of garlic!" either.

I like the Two Fat Ladies (now one retired Fat Lady). All the places they visited around the UK were interesting and beautiful.

Me and the little lady cuddled up on the sofa and watched the whole thing. Good tv, and Madame Child was a treasure.

Her show with Jacques Pepin was classic.

I was just going to post to you that Rachael uses the word "groovy" when she cooks!?!

She has become so annoying that I can't stand to watch her shows anymore. I know many people want meals cooked in under 30 minutes, but cooking is something I enjoy doing and it's relaxing for me. Especially if I get to cook for someone else and they enjoy it. It's not something I try to race through in under 30 minutes.

Besides, she is too hyper for me.

I enjoy Giada De Laurentiis' show "Everyday Italian."

I like Michael Chiarello too. Many of his meals can be prepared a day in advance for entertaining. Also, it looks like he has fun cooking for, and being with, his family and friends.
