Why don’t they grow wheat, barley, corn, etc?
At least you can make beer and whisky from grains.
As for kale, I am trying recall if I have ever eaten kale.

I’d rather have swiss chard. At least that tastes good with pasta, tomato sauce and parmesan. The stalks aren’t too bad battered and deep fried.

Both kale and chard are vastly overrated as far as flavor.
If I want fresh greens I generally stick with the Big Three;
Collard, Mustard and Turnip Greens.

Kale and chard go limp and slimy almost instantly.
Low to no flavor.
Good for those who see food primarily as a form of medicine.

I eat kale regularly—lacinato kale! But I have no idea what “customized kale” is!!!!

Besides that, growing kale will not even make a minuscule dent in feeding the hungry world. Really!!!!

We grow Jalapeños, serranos, anchos and swiss chard year-round in our basement.

The Mrs. LOVES hot peppers swiss chard.

I also recently bought a bag of kale chips. Pretty good although a little expensive.

Then I watched a youtube on ways to preserve food and the lady said you can drench kale in salad dressing and then dehydrate it.

The dehydrator arrives tomorrow.

According to Fain, 1 square foot within one of these indoor farms is 100 times more productive than 1 square foot of arable land.

It sounds like they learned this from the Israelis.

I’ve never heard of “customized Kale”-is that another term for GMOs? I do grow it and eat it-but I agree that Kale is over-rated-doesn’t have as much flavor as Spinach, Chard, or mustard/turnip greens. I like my greens just barely cooked, so I season them with Mrs. Dash or lemon pepped, steam them for maybe 3 minutes and serve them with real butter.

Ah, no. I do eat a lot of vegetables, though.

I eat kale, fried crisp with a bit of lemon.

Have no idea what "customized kale" would be. Do they cover it like they do "white" asparagus?

I eat Kale. I buy a spinach/kale salad mix. I also buy dried flavored kale snacks.
I’m not great at eating vegetables but love the different greens so try to eat them as often as I can. I had scrambled eggs with spinach/kale in them this morning.

The U.N. projects that by 2050, food production will need to increase by about 60 percent to feed the growing global population.

This is actually good news. World population is not going to grow by 60 percent by 2050. The projected increase in food demand is mainly due to improved diets as the bulk of the third world becomes (relatively) more affluent. As incomes rise, the first thing people what to do is eat better. This generally means more animal protein. All of this is very good news for U.S. farmers, agribusinesses, and exports because we are the most productive and innovative food producers in the world.

Cooked correctly, kale is very tasty. For example, kale chips with garlic and parmesan cheese.

Or in the slow cooker with chicken broth, a can of Rotel tomatoes, garlic, and some type of sausage - I like to go with kielbasa myself, but something a bit spicier would be good. Cook for six hours on low. Serve over white rice with corn bread. Good eating.

Everybody says, “Oh, kale chips are DELICIOUS!”. But then, those are the people who LIKE kale. How could the chips be delicious, when the other kale recipes taste so nasty? I’m not a greens lover, though. They usually taste bitter to me, and I never have cared for bitter foods. I don’t even like the white parts of iceberg lettuce. That’s my nephew’s favorite part, but then, he’s a chef.
