7 Minute Video: Smoking Chipotle Pollo Rojo Wings

I smoked 30 Pollo Rojo wing pieces on my 22" Weber Grill. The wings were marinated in the magic mojo at La Ranchera grocery in Broward County. My rub was a combination of Adobo plus Chipotle Sea Salt and other seasonings. One hour of smoking and then the wings were flipped for a final 15 minutes more. Great results primarily due to the very unique secret mojo that La Ranchera uses.

These turned out great. The KEY was that Magic Mojo marinade from La Ranchera grocery in Broward County. I would like to hear feedback from other Broward Freepers who go to that market and also smoke either Pollo Rojo chicken leg quarters or wings on their grills.

How do you smoke the wings? I find they are impossible to light. (sorry, I just had to).

BTW, I used HALF the grate for the charcoal. On the opposite half of the grill above I placed the wing pieces so the heat was indirect. Using that Pollo Rojo Magic Mojo results in a deep red color when they are done.

The Magic Mojo in which they are marinated at La Ranchera is a given. From there you can make a rub with whatever flavors and spices you like. For me the emphasis was on Chipotle plus the Adobo base I use on most everything.

If you ever travel thru Memphis stop at central bbq and order up some of their wings. One of the tastiest things I have ever had in my mouth.

This is a nice side. Great technique: dollops of corn muffin mix batter
on jalapeno halves, then the Poppers are baked golden.

JALAPENO POPPERS

VARY--Good idea to stuff jalapenos w/ cream cheese and cheddar combo before dolloping on cornbread.

Great side---creamy casserole with green chili twist.
Served here attractively w/ spiced red coleslaw California style. Add Jelly Beans for dessert.

Ronald Reagan’s Rancho California Rice

ING 1/3 cup onion, chopped 2 cups rice, cooked 1 cup cottage cheese 1/4 cup sour cream
bay leaf Salt and pepper 16 oz. green chili (canned) 1/2 cup grated cheddar cheese (can use f/f)

METHOD Cook rice, follow pkg method (add bay leaf, discard when rice is done).
Sauté onions soft in sprayed pan. Add rice, sour cream, cottage cheese, s/p. Mix well.

ASSEMBLY In greased casserole, layer rice, chilies, and 1/4 cup cheddar.
Bake 375 deg 20 min. Top with remaining cheese; bake/melt 5 min.

Remember when Chicken Wings were nearly scrap and could be had at the Butcher for almost nothing?
If you had kids in Little League, you could ask for a bag of free wings with your regular meat order.
Used for Soup and other things . . .

Now, Wings are often more expensive than skinless boneless chicken breast.

Whod’a thunk it?

Well, you and I will get along very well. Just last night I crock potted a bunch of bone in beef short ribs with beans and various spices, the most important being the chipotles in adobo. I swear it was even better tonight when I got the leftovers.
