A Pig's Feet Recipe For The Super Bowl

1 4 Lb.pork roast 4 pig's feet 1 medium sized onion 4 garlic cloves 6 peppercorns 3 bay leaves 1 Tbl. salt

Take the pig's feet and pork roast and along with rest of the ingredients place them in a large pot and cover them with water. Boil them for 3 to 4 hours skimming foam from the top as often as needed. When tender remove roast and pigs' feet from the consommé, strain it into a large bowl and save. Remove meat from roast excluding fat, gristle and bone. Remove meat and skin from pigs' feet excluding bones only. Combine meat, place into bowls. Pour the consommé over meat and let cool to room temperature. Cover and refrigerate for several hours or overnight. The consommé' will become a delicious gelatin. Remove layer of fat from the top before serving.

Just made sweet and sour pigs feet last week. Next time though I will cook it in my slow cooker. Flavor was great but a little tough. Slow cooker will fix that.

My mother was a farm girl growing up in the Great Depression. When I was a boy I remember her happily sitting alone in the kitchen (mid 1960’s) eating pickled pigs feet, limburger cheese and washing it down with buttermilk. This explains why my father was in the living room with us instead of with mom in the kitchen.

For those of us who are not hillbillys, brown pork roast after seasoning with your choice of flavorings.... put into slow cooker with some beef broth and pork gravy.....cook on low for about 8 hours.

Or some kind of cheese/meat/salsa hot dip with tortilla chips for Super Bowl. Just another idea. I know no one who would eat the pigs feet recipe as provided.

If anyone out there actually intends making this recipe, I highly advise you to bring it to a boil, then reduce to just under a simmer. Boiling for four hours is something that should never happen to any cut of roast....

Thank you!!! I clicked on this thread thinking we would be talking about great Super Bowl snack ideas (not gelatin containing pigs feet). Yes, we made sure to buy at the grocery last weekend: 1 lb hamburger to brown, jar of “hot” salsa, 2 lbs velveeta, huge bag of tostito-type chips. And I have been thinking about it ever since!!
